1 oz kosher or sea salt per 1 quart of distilled or filtered water. It takes 1 quart of water to top off 2 quarts of food. 2 tablespoons and 1 teaspoon of salt per 1 quart of water or a little under 1/4 cup is 3% salt brine solution. I will probably end up selling 1 gallon of ready made brine for $2-3 dollars, or less if I get the water for less. This works every time, no matter the container size. Just cover veggies or fruits with brine and weight or wedge them below the brine for success. Fermented food is healthy, tastes great, and no electricity ior gas is needed for the process.
