Phenol is an active constituent in food and plants, this constituent gives these foods and plants specific medicinal properties such as:

Anti-inflammatory - Used to reduce Inflammation
Antiseptic - A substance that stops or slows down the growth of microorganisms
Antioxidant - A substance that protects cells from damage caused by free radicals

Phenols constitute one of the larger groups of secondary plant metabolites. They are found throughout nature in plants such as Thyme, White Willow, and many of the different species of the Mint Family. These are even found in our daily herbs such as Oregano, Rosemary, Marjoram, Sage and Tarragon.

Phenol has constituents that range from:
Salicylic Acid - A bitter compound present in certain plants. It is used as a fungicide and in the manufacturing of Aspirin

Basically this can be defined as a secondary metabolite in species of plants that work as a defense against herbivores. They are made up of one or more sugars combined with an alcohol or a complex molecule such as a steroid nucleus.
Still not simple, but as simple as I can break the full definition down into.
