Is it bread? Is it cake? No, it's lemon babka!

Lori Fiechter here with My Indiana Kitchen! I haven't posted a bread video since the ciabatta rolls. I was too lazy to video tape the potato buns! But today is something I've never made before: lemon babka! I bought 4 lovely lemons for pie but had juice enough to spare. I remembered a rich lemon yeast bread I made decades ago and tried to find something similar. What I found was: lemon babka! After looking at the recipe, I recalled why I only made it once--one loaf called for an entire cup of butter. I decided to cut the butter amount in half and see how it turned out.

So what is lemon babka? It's a Polish bread that looks like bunt cake and taste like a lemon scone! It's addictive, too. After eating two (was it three?) slices, I froze the rest so I would quit eating it. It is not like bread; you'd never guess it has yeast in it. Next time, I would not refrigerate the dough--the whole process took me from 9 am to 9 pm! And next time, I would knead the dough to develop the gluten a little more--so that it is more like challah.

Top it off with a dollop of whipped cream or whipped cream cheese (mascarpone, anyone?) add some strong British tea, and have yourself a proper tea party. Cheerio!
