Sourdough Donut (How to make Doughnut with sourdough starter)
For the doughnut start with a preferment based with these ingredients:
130 gr starter 100 % hydrated
120 gr milk
1 egg
65 gr sugar
130 gr flour.
Mix together and le trouble in size between 2-4 hours depending on your environment temp and on the state of your culture.
follow with 700 gr flour
100 gr soft butter
65 gr sugar
2 eggs
200 gr water
10 gr salt
1 tbs vanilla essence
1 orange zest.
Add all the ingredient together and add in the preferment. mix until the ingredients are well combined and then let proof for another 2 hours.
next step is to cut them into balls of roughly 80-90 gr each.
Roll them and proof them for 2-3 hours or until they double in size.
Fry them at 180 C and 3 minutes for side
