Today I smoked a hefty venison roast for about 3hrs low & slow on the PitBoss Pro Series. While I had the smoker going I threw on several hamburgers, a pan of veggies and even a 3lb bologna. I like to cook and I may have gone overboard today but with the family I like to cook ahead when I can. I was using #DirtySouthBBQ Competition Blend and the All Purpose Goodness a low-sodium marinade.

The burgers will disappear by tomorrow. The veggies will be gone by lunch. We all pick at the bologna as a snack. The main course, the venison, will be nothing but the bone and the trimmings by end of day tomorrow.
