Greek Chicken Casserole:
-6-8 red potatoes diced
-2 tsp minced garlic
-1.5 TBSP EVOO
-tsp dill, oregano, and fresh basil if you have it
- S/P
-4 chicken breasts.

-Preheat oven to 425.
-mix potatoes and spices. Top with chicken breast and add some more of your favorite herbs and spices and olive Oil.
-Cook 25 min or so
-Extra: Top with a little bit of cheese and put back into the oven until cheese is melted.
