Delicious Summer Sides//Homemade Fish Sticks//Fudgy Brownies From Scratch

Today i'm diving into the kitchen and giving you a few more of my recipes that I haven't shared just yet. I'll put the recipes for each down below! I hope you enjoy and get a little motivation to clean up after dinner.

Fudgy Brownies:
3/4 Cup Cocoa Powder
1/2 tsp Baking SODA ( I said Powder in my voiceover sorry!)
2/3 Cup Melted Butter
1/2 Cup Boiling Water
2 Cups Sugar
2 Large Eggs
1 tsp Vanilla
1/2 tsp salt
1 1/3 Cups All Purpose flour
2 Cups Semi-Sweet Choc Chips (Milk-Chocolate for Sweeter Brownie/Dark for More bitter brownie)

1. Mix your Cocoa and Baking Soda With 1/3 cup melted butter. Add in Boiling Water and mix until smooth and shiny
2. Add in Sugar, Eggs, vanilla, salt, and stream in your butter if it's too hot. Mix well.
3. Add in your flour and chocolate chips and mix until just incorporated.
4. Bake in a 9x13 pan at 350 degrees f for 30-35 mins or until a knife comes out clean.

Melting Sweet Potatoes:
1. Peel and wash your potatoes.
2. Cut into 1 inch thick coins.
3. Douse with a healthy helping of melted butter.
4. Salt each potato and mix them up.
5. put on a single layer on a baking sheet at 425 degrees f for 20 mins, then flip and cook another 20 mins.

Squash Fritters
3 Cups Shredded Squash ( zucchini or yellow work fine)
3/4 to 1 cup Shredded cheese (Cheddar, Parmesan, or whatever you prefer)
1 tsp each of old bay, salt, pepper
1/2 tsp garlic and onion powder
2 eggs
3/4 to 1 cup panko breadcrumbs

1. Mix squash, cheese, and seasonings together.
2. Add in 2 eggs and mix
3. Add in enough panko so your fritter holds it's patty shape.
4. Pan fry with coconut oil or oil of choice
5. drain on a paper towel in a warm place until your dinner is finished.

Fish Sticks:
Tilapia Fillets
Panko Breadcrumbs
Egg
Milk
Old Bay
Salt
Pepper

1. Wash and dry fillets with a paper towel.
2. Add Panko to a shallow dish and season well.
3. Add 1 egg and a little milk to a dish and mix together.
4. Cut Fillets in strips or chunks and add them to the milk mixture.
5. Dredge fillets in breadcrumbs then add them to a lined baking sheet.
6. Bake at 425 for 20 mins.
