How to make an Heritage sourdough bread (Voitek Sourdough)

You have wanted to know how to make my famous Sourdough Voitek bread and here you have the recipe for it.
200 gr white flour
100 gr rye flour
100 gr wholemeal
100 gr spelt flour or semolina.
Mix all the flour and then add the 70% of water. Mix and rest for 30 minutes.
And add 20 % of starter mix through again.
After an hour of rest mix again and add 2.5% and follow the method fold and stretch. Let it double and then CUT and shape for the proving baskets.
Bake when the bread has already rested long enough (roughly an hour).
Bake as usual at 220 C for 45 minutes to an hour.
