Kefir is created by mixing milk with kefir grains. It is produced from a variety of milk, including goat, sheep, cow, soy, rice, and coconut milk. Even coconut water may be utilized. Microbiological surveys have revealed that kefir grains consist of a polysaccharide-protein matrix that includes lactic acid bacteria and yeasts. kefir has been used for millennia in many countries around the world, particularly in Eastern Europe. It comes from the Turkish word keyif, which signifies “feeling good.”
