How To Make Chile Colorado | How To Make Spanish Rice | Family Recipe

Hey YouTube! Today I want to share with you all a very delish family recipe. Chile Colorado is a latin dish that I know you will love! Chile Colorado Recipe:

2 pounds of diced pork
1/2 cup water
7-10 dried California chile
3-4 dried Pasilla chile
3-10 dried Arbol chile
1 1/2 cups water (you can use steep water as well)
3-5 bay leaves
3 garlic cloves
1 tablespoon salt
1 teaspoon pepper

In a large pot steep chili peppers for 10-15mins. With tongs transfer chiles to a blender, add garlic cloves, salt, pepper and water. Blend until liquified. Use a strainer to soft skin and seeds from chili sauce. Set aside.

In a large pot add 1/2 cup of water and simmer. Once simmered add pork and bay leaves. Water will evaporate and continue cookings until browned add a pinch of salt and pepper. Add chili sauce and simmer for 20-30 mins stirring occasionally.

Spanish Rice Recipe:

1 1/2 cup Jasmin rice
3 cups water
1/2 cup chopped green onions
2 tablespoon minced garlic
1 small can 15oz tomato sauce
2-3 tablespoons chicken bouillon
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper

In a pot heat olive oil. add rice and cook until golden brown. Add onions and sauté. Add garlic and sauté. add seasonings and combine. carefully add 3 cups of water. once simmering add tomato sauce and chicken bouillon, stir to combine. Cover pot with lid and lower to lowest heat. Simmer for about 15-20 mins until top of water is evaporated. Turn off heat and let rice sit for an additional 5-10 mins for water to be completely absorbed and to avoid burning the bottom.

Serve both on plate and enjoy! Chili sauce goes great for any red sauce dishes!
