The Noodle Distributing Process

The noodle-dipping process involves the use of high-temperature water to dip noodles. This water is preferably 40degC or higher. The water may also contain a small quantity of seasoning, emulsifier, or anti-binding agent. The amount of water added to the noodles is five to thirty percent of the string's weight before heating. The process is complete when the noodle has reached the desired texture.
