Grits! Why Polenta Is A Great Staple Right Now!

Polenta or Grits, however you know ground coarse corn is delicious, and, practical for food to keep on hand and enjoy! Shelf-stable, affordable, super easy to prepare on the stove, or even with a bit of hot water in a pinch!

They make a sweet porridge breakfast-style with cinnamon, coconut cream/milk, any nut milk, maple syrup or honey, agave, nutmeg? It's entirely up to you! Jamaican cornmeal porridge is excellent, I make mine with coconut cream, cinnamon, fresh ground nutmeg (use a grater), honey, and a tad of pure vanilla extract!

Make it savory too! I cut up one sweet onion sauteed in coconut oil or vegan butter, olive oil, whatever you like, add in some veggies, put it on top of your cooked polenta, and viola!

You may have seen the polenta in the "log" shape wrapped in plastic for about $4.99 which you can unwrap, it's cooked and slice it. I like mine sliced into pieces not too thick but like the way, we would prepare bread appetizers about that thickness or how you like it? Melt vegan cheese, vegan cream cheese, top out of the oven with avocado, capers, tomato thin slices, and enjoy! I used to make these for my son and he loved them!
