POTATO WAFFLE SANDWICH WITH CREAMY PESTO

◽️Dairy free
◽️Gluten free
◽️Oil Free
◽️Overt fat free
◽️Plant based

This was an easy dinner because we already had a lot of the items made from leftovers. (Doing our best lately to try and batch cook!)

We made extra potato waffles one night, froze them and then stuck them in the toaster oven when making the sandwiches. We made extra pesto and potato cheese a couple nights before so we would have them on hand as yummy spreads!

We simply chopped and roasted the eggplant, onions and peppers. Then we baked them at 375 F for about 45-50 minutes. Next, chopped up the fresh veggies and assembled this delicious waffle sandwich!

We recommend toasting the waffle nice and crispy and eat shortly after assembling as the waffle bun will start lose form.
