How to make Watermelon "TUNA" for Sushi Rolls and More! | Veg Sushi at Home

WATERMELON "TUNA" RECIPE

INGREDIENTS:
1/2 Large Watermelon (preferably seedless, but you do you)
Marinade:
3 tbsp Coconut Aminos https://amzn.to/3PUJyPN
3 tbsp Lime Juice
3 cloves pressed garlic
2 tsp grated ginger
1 sheet of Nori chopped https://amzn.to/3x8SU39
DIRECTIONS:
1. Set your oven to 400F
2. Cut watermelon into 1" cubes and place on parchment paper on a baking sheet, leaving some space between.
3. Put watermelon into the oven for 30 minutes, then flip all the pieces and cook for 30 more minutes.
4. Remove watermelon from the oven and allow to cool completely. Try not to eat it.
5. Combine all the marinade ingredients together and add the cooled watermelon. Put it into the refrigerator for 24-48 hours.
6. Remove and enjoy or make some sushi!

SUSHI RICE RECIPE

INGREDIENTS:
2 cups uncooked glutinous white rice (sushi rice) - I used long grain white rice just fine
3 cups water
1/2 cup rice vinegar
1 tbsp vegetable oil (you can omit this or just use a splash)
1/4 cup white sugar (I used maple syrup)
1 tsp salt
DIRECTIONS:
1. Rinse the rice under cold water and place in a rice cooker with all of the water and cook until tender and water is absorbed and allow to cool off a little.
2. Mix the remaining ingredients in a small pot over low heat until everything is dissolved.
3. Once the rice is cooled a little (not too much), then sprinkle the vinegar sugar mixture and stir it in until it is fully absorbed.
4. Make sushi!
