Make macaron at home like a pro
Macarons are an amazing Italian biscuit, made of almond meal egg whites and Sugar.
The balance of these three ingredients creates something of major beauty and flavour. Everybody loves macarons, and this is my recipe.
Ingrdients
55 egg whites
150 gr almond meal
150 gr icing sugar
For this first part blend the dry ingredients into fine dust, and pass them through a sieve.
Keep them on the side and pour the egg whites on it.
55 gr egg whites
150 gr caster sugar.
For this next step we need to whisk the egg whites until a soft pick, and then we start adding the sugar, whip until the sugar is completely dissolved.
Once the meringue is ready (French Meringue), you can gradually add it into the other bowl with the dry ingredients. I suggest mixing the ingredient slowly and in three additions. Like you can see in the video.
Let's get to the secrets of macarons, you need to overwork the mixture, to be able to have a nice flat macaron.
You need to dry them before you bake them.
Dry them until the top of the macaron do not stick to your finger.
Then bake them at 150 celsius for 11-15 minutes.
Fill them in with the best and most inviting filling you like, such as ganashe, marmalade or jam.
