Learn this EXTRA CHOCOLATE Chocolate Cake | ആർക്കും ചെയ്യാവുന്ന ചോക്ലേറ്റ് കേക്ക്
Today Chef EK dives into a unique chocolate cake with a little chocolate garnish. He uses Compound Ganache from the previous video to make a chocolate cream when combined with whipped cream. the recipe is in the video, there are 2 in the marked location!
Cake mix:
Preheat oven to 180c/360f
1)Melt the Water, Sugar, Chocolate and Butter together in a pot
*only bring to melt, do not cook**
2)Sift in your dry ingredients
3) add your eggs one at a time while you mix
4)Spray or add parchment to your cake mold (6 inch mold in video)
5)Pour into mold and bake for about 30 minutes
Cake should rest about 2 hours after it is baked
Chocolate Sauce:
1)Melt your Ganache
2)Place your ganache with half of the whipped cream and mix to level the
temperature
3)Add the remaining half of the whipped cream and mix thoroughly
Set aside to pipe on the cake when it is cooled
Finishing the Cake:
1)Cut the top level of the cake and divide into equal layers
2)This chocolate Cake does not require Sugar Syrup, continue onto piping
3)Portion your chocolate spread onto the first layer of your cake with a piping bag
4) Add extra melted chocolate sauce in between layers for extra flavor
5) Repeat for each layer of your cake. this video only demonstrates 2 layers
6)Make your thin crumb coat on the cake and prepare to add the finishing layer
7)Pipe your finishing layer on the exterior of the cake evenly
8)Flatten the top layer of the cake lightly with a palette knife
9)Use a Putty blade to finish the sides
**Place in refrigerator for 2 hours to help the cream get set before pouring warm ganache on top**
10)distribute Ganache atop of the cake by pouring on the back end of a spoon to diffuse the impact of the melted sauce
Garnish:
1)Measure out a cake wrap exactly the size of the circumference of your cake
2)cut it into equal triangular shapes by diagonally cutting from end to end
3)Pour melted ganache onto one cake wrap and smooth it evenly
4)place it directly on the side of the cake while still wet, do this immediately so the chocolate sticks to the cake while it sets
5)Pour white chocolate onto the 2nd cake wrap and use a comb to make even straight lines horizontally
6)Once the white chocolate sets partially, add the dark chocolate and fill in the lines
7)Take a circular base to cut circles in chocolate
Once it sets, decorate as you please!
