In combination with the lemon curd from a previous video, Chef EK shows you how to make a full lemon cake from start to finish with two different designs in a great detailed explanation.

Sponge:
1)Separate the egg yolks and whites
2)Start to make your meringue by beating the egg whites and slowly adding the sugar
3)Once your whites are meringue, add the egg yolks one at a time
Don't over mix, only make sure they're integrated
4)Sift in the flour and mix well with a rubber spatula
5)Add the Oil, Vanilla essence and Milk and stir in
6)Add lemon Zest and Lemon juice in last so the batter does not split
*Bake with Steaming Method at 165c/330f for 45-55 minutes*

Let the sponge rest for 2 hours outside of the pan immediately after it bakes. Chef EK also Freezes his sponge before he cuts it to make the process easier.

Lemon Cream:
1)Whip your cream
2)Take Lemon Curd and mix it together at at a 3:7 ratio favoring whipping cream

1st Design:
1)Cut the Sponge into 3 equal layers
2) Use your Lemon Filling to make dots of cream with an open star tip in a circular manner for all three layers
3)Sprinkle lemon zest on the top layer and add garnish like lemon crisps

This finish is a preference for family consumption or small gatherings, the next design is a little more commercial and requires very little extra finishing.

2nd Design:
1)Add Lemon Filling/cream to the sides of your cake and make a finishing coat.
Using a palette knife to even it out and a putty blade to finish the sides
2)Make some gel of your preferred color with equal parts water and gel, and a few drops of food coloring
3)Pour your gel onto the top of the cake and use a palette knife to spread it across the top evenly, just until it slowly drips down the side
4)Add a few whipped topping nodes on the top and place some garnish

Making garnish is easy:
1)Slice Lemon
2)Coat in sugar
3)Place on parchment paper
4)Bake at 100c for about 5 hours until blackened and crispy
