Today Chef EK uses the Chocolate sponge from his Sunday special baking class episode 6 and the Rich chocolate mousse from another video to make This Black Forest Cake. This recipe contains no baking powder or baking soda

Cake:
1) Cut your sponge into 3 layers
2)Measure and Strain your cherries
3)After you mousse has softened at room temperature for 2 hours, portion what you need into a piping bag
4)Coat your first layer of sponge with the cherry syrup
5)Pipe your layer of mousse and add cherries in between
6)Add your cherry syrup to the second sponge
7)Place a Layer of Whipped Cream on the second sponge
8)Place the third layer and use the whipping cream to make a crumb coat
9)Apply the finishing Coat and then the garnish

Side Chocolate Garnish:
1)Pour Melted Compound onto a clean table or board
2)Spread evenly and thin
3) Wait until it partially sets and square the edges
4)Using a Putty Blade, scrape the almost hardened chcocolate until it binds in a circular or asymmetric design

Nest Garnish:
1) Take a Baking tray and put it in the freezer
2)Once frozen, remove and pipe melted chocolate in lines across horizontally
3)Allow a few seconds for the chocolate to begin to set, and using a putty blade, gently scrape the chocolate lines together until bound, and roll them in the shape of a nest.
