Today Chef EK shows you how to bake this simple chocolate pastry loaf at home. A great evening treat or something to show off your baking skills when entertaining guests! Combining a chocolate sponge loaf with a bittersweet filling made with 100% cacao and whipping cream, gives you this easy to make recipe
Sponge:

1) Separate your egg yolks and whites
2) Make Meringue by whipping the egg whites and slowly adding sugar
3)Add your egg yolks slowly and fold in with spatula
4)Add the Oil, Milk and Vanilla
5) Sift in your dry ingredients

Bake at 165c/330f for 35-45 minutes using the steaming method

Chocolate filling:
1)Use the Double boiling method to melt your chocolate
2)Add the butter while it's melting
3)After fully melted, remove from heat and let cool

4) Whip your whipping cream to about 80% of the way
5)Temper the hot chocolate and cold whipped cream by taking half of each and adding them into a 3rd clean bowl, mix lightly.
6) Take the 50-50 mix and add it to the remaining chocolate
7)Take the chocolate mix and add it to the remaining whipped cream to equalize the temperature between the chocolate and whipped cream without causing it to split

Cut your sponge loaf into 2 equal layers and portion your filling on each.

Cut and serve!
