Dr Mason, in his HVMN interview, concludes with key points on: ruminant-based agriculture replenishes top soil, while providing extremely healthy animal-based food. Also, he explains how critical micronutrients are to our metabolic health. For example, people with hemochromatosis, which most think is an overload of iron is actually an imbalance of key micronutrients. These are often copper & zinc, which are crowded out of the transporters due to so much iron--thus the disease is actually a lack of these micronutrients being available.
