Heaps of Homegrown Hash-browns

10-23-21: skip the raw hashbrowns--they discolor before they completely thaw. Worth it to blanch first
Now that I'm finished with tomatoes (no, really! I mean it this time) it was time to see how the red potatoes were faring, buried in the barn straw. That was Stan's job, armed with a flashlight. Verdict: they are starting to sprout and we need to use them now. Well, you can't "use" a huge dishpan of potatoes. They yielded much better than usual this year. My brother had suggested freezing them and found some British recipes for doing that. I decided that hash browns were the way to go and tried both the blanched and raw methods. Raw would be much easier for the next round! But I'll have to see what the quality is on both. Updates once I've used them. If I remember....
