Boxing Day Garden and Last Call for Potatoes!

No snow here on the day after Christmas...in fact, I could pick lettuce and spinach if I cared to! We used up the last 3/4 bushed of potatoes--this time, diced. That makes a total of 112 bags of potatoes--about 4 cups per bag.
Here is the recipe for quick and easy ham and potato soup using frozen (thawed) potatoes. Because I was trying to use up my frozen raw shreds, I did not thaw first (or they would quickly turn brown):

Ham and Hash browns Soup

Cook the following on low heat until celery and potatoes are tender; about 25-30 minutes:

24-28 oz. frozen hash browns, thawed in fridge overnight.
2 cups diced cooked ham
½ cup diced onion
2 stalks celery, diced
4 cups chicken broth
¼ tsp. each salt and pepper
¼ tsp each garlic powder and onion powder

Turn off heat and stir in until melted:

3-4 oz. cream cheese
4 oz. shredded cheddar cheese (shred from chunk, not pre-shredded; it will incorporate better)
