Roasted Hatch Chilies!

Instead of salsa...or sriracha...or sweet chili sauce...Here is one more thing I made with our over-abundance of hot peppers: roasted green chilies. Also known as Hatch Chilies (that may be a geographic term...like Vidalia onions can only come from Georgia), the flavor really gets rich when roasted. I have a step-by-step video summer of 2019 on roasting both sweet and hot peppers so I didn't go through the steps this time.

One gallon of peppers made only 4 cups of roasted chilies to use and to freeze. My niece sent me a recipe for copycat Denver green pork chili that I'd like to try. In the meantime, it is amazing how good these are simply topped with a dab of cream cheese and piled on a blue tortilla chip! Buen provecho!
