Snow Pea/ Sweet Pepper Blend

update 12-4-21: I've used these frozen pepper/snow pea combos several times and they turned out great! With orange chicken and rice (Schwan's mandarin chicken) and noodle bowls (Costco) they made added some farm fresh to frozen convenience meals.

I'm so glad that Stan planted those late snow peas--they like this weather much better than summer weather! Stan didn't even plant these in rows; just emptied out the rest of the bag of seed and covered them with a little dirt and a lot of straw! Not sure when he planted them--late July? I could go back and look at my videos but...nah. I don't care that much right now.

I blanched the snow peas and then mixed them with slivers of sweet red pepper--no need to blanch the peppers. Then I vaccuum-sealed the combo. I'll have bags of stir-fry veggies to mix with rice or noodles this winter to remind me of warmer times!
