This is "Classic Egg Salad with a Twist" **If you've always loved egg salad, but wanted to see if there's a better version out there, take a look at ours **This was adapted from a recipe from cookingprofessionally.com **In all honesty, we haven't always liked every recipe of theirs we've tried **But, this was one of the exceptions **We even surprised ourselves at what a difference their additions made to a classic egg salad recipe **THIS is the Paul and Judy Version 🎉 We both love egg salad, so we took a chance and doubled the recipe **That turned out to be a good decision ** 😋 **ENJOY!

▶︎Recipe INGREDIENTS:
6 eggs
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon prepared yellow mustard
1/2 lemon, juiced
1/4 cup chopped green onions
salt and pepper, to taste

▶︎Recipe DIRECTIONS:
1. Hard boil the eggs by placing them in a saucepan and covering them completely with cold water. Once you bring the water to a boil, remove the saucepan from the heat. Cover with a lid, and let the eggs sit in the hot water for 10-12 minutes.
2. Remove the eggs from the water and place them in an ice bath. Once they have cooled, peel the eggs and roughly chop.
3. In a mixing bowl, stir together the rest of the recipe contents. Add the egg bits and combine.
4. Serve immediately, or place in the refrigerator to enjoy later.
