Hey friends and welcome!🌞 A very real reminder that counting your calories won't help you love yourself. Counting our calories and obsessing over every thing we eat will begin to warp our perception of food, ourselves and the world around us. Food is so much more than a number, its memories, nourishment, culture, enjoyment and necessary for life. So heres what I *actually* eat in a week and I hope it inspires you to enjoy food and give yourself some love!

What I use to film : Sony ZV1

Dinner DAY 1:
1/4 large Spanish onion ( chopped finely )
2 cups mushrooms ( sliced )
3 cloves garlic ( minced )
1/2" fresh ginger ( minced )
3 cups spinach ( about )
3 tbsp malaysian curry powder ( or your favourite curry powder )
1 tsp black pepper
1/2 tsp salt ( or taste! )
1 tsp turmeric powder
1 cup canned coconut milk
3/4 cup white beans ( of choice, Navy, Cannellini, Lima Beans ) - already cooked
1/2 cup long grain white rice
1 cup water
1 tbsp neutral oil

Heat a large pan with a lid on medium heat. Once hot add oil, onion, garlic, ginger and 1 tbsp curry powder. Sauté for 3-4 minutes than add mushrooms, cover with a lid for 2 minutes than uncover and let them get slightly browned.

Once mushrooms have browned a bit add black pepper, salt, turmeric, coconut milk, the rest of the curry powder, spinach, beans, rice and water. Mix really well, cover with a lid and cook until rice is fully done ( about 20-25 minutes ). Serve with lime!

Muffins!!

3 large ripe bananas
1/4 cup coconut oil
1/2 cup coconut sugar
3 tbsp plant milk of choice
1 cup whole wheat flour
1/2 cup coconut flour ( sub for more whole wheat flour or oat flour )
1/2 cup oat flour ( sub for more whole wheat flour )
1 tsp baking powder
1/2 tsp salt
48g walnuts
63g peanuts
65g chocolate chips ( dark chocolate )

Preheat over to 350F

Mash bananas in a large bowl, add soft coconut oil, coconut sugar, milk and salt to the bowl and mix really well. Add flour and baking powder, mix in 75% of the way then add nuts and chocolate then finish mixing.

Oil a muffin tin ( my tin makes smaller muffins so if you make larger ones they will take longer in the oven ). Spread the batter out evenly then bake for 26-29 minutes. If you have a large tin try 32-35 minutes. ( *they don't puff up a lot with the coconut flour* but if you use only whole wheat flour they will rise more, so keep that in mind )
