How to Make Tasty Japanese Aji Mench at Home | Fish Menchi-Katsu
Menchi-katsu is usually made with minced pork, but after seeing a restaurant on TV that was serving “Aji Mench" I thought it looked delicious and wanted to try my hand at making it myself.
Ingredients:
Horse Mackerel, minced
Scallions, chopped
Garlic, finely chopped
Cooking oil
1 Tbsp dashi
Black pepper
2 Tbsp water
1 tsp salt
1 tsp potato (or corn) starch
2 eggs
Flour
Panko breadcrumbs
Steps:
1) Chop scallions and garlic.
2) Fry garlic in cooking oil, adding scallions, dashi, and black pepper.
3) Let scallion mixture cool and begin filleting horse mackerel.
4) Mince horse mackerel and add to scallion mixture along with water, salt, and starch.
5) Shape into 1 cm thick patties and set in freezer for 20 minutes.
6) Coat patties in egg, flour, and breadcrumbs, then fry about 2 to 3 minutes per side.
7) Let cool for about 3 minutes and serve aside shredded cabbage and top with Tonkatsu or tartar sauce.
