These are the absolute best gluten free chocolate chip cookies! They are delicious and easy to make. The cookie dough can be frozen and taken with you in your RV for an easy, quick and delicious treat!

RV Time with Doc & Pam - Glorious Gluten Free Chocolate Chip Cookies
Ingredients
• 2 1/4 cups of all-purpose gluten free flour (I.e. King Arthur)
• 1 cup of Casava flour
• 1 cup of buckwheat flour
• 2 tsp. salt
• 4 ounces cream cheese, softened at room temperature
• 24 teaspoons of unsalted butter, melted
• 2 cups of packed brown sugar
• 1 cup of sugar
• 3 tsp. pure vanilla extract
• 4 egg yolks
• 1 cup of semi-sweet chocolate chips
• 3 cups of Ghirardelli milk chocolate chips
Instructions
1. Mix the flours and salt in a bowl, set aside.
2. In your stand mixer, place the cream cheese and melted butter and start the mixer at low to medium speed until well mixed together.
3. Add the brown sugar and sugar and mix on medium speed for about 2 minutes.
4. Add vanilla extract and egg yolks, mixing on low to medium speed until everything is well mixed.
5. Add the flour/salt mixture, mix at low speed until everything is mixed well together.
6. Add the chocolate chips, continue mixing until everything is mixed well together and you have a moist batter ball.
7. Make cookie dough balls and freeze. We recommend using parchment paper so that they don’t all stick together.
8. When ready to use, take out the desired amount of cookie dough balls. Cook at 350 F for 7-9 minutes, then press down with a fork. Continue cooking for another 3-5 minutes to desired consistent and enjoy!
