Amazing pork steaks on the offset smoker.

Pork steaks are an amazing cut, and I usually do them over direct heat.
Not today! Today we're using indirect heat on the offset smoker, and they turned out amazing.
Dry brined overnight with just some kosher salt, and then onto the offset for about 3 hours with post oak and mesquite, and finished off in a foil wrapped pan for the perfect texture that only a pork steak has.
So good, don't be afraid to smoke these babies.
