Borage officinale plant good plans for the healt

Borage is a bushy edible plant.
It comes from the shores of the Mediterranean, and is made up of hairy stems, large light green leaves, and blue star-shaped flowers.
The stems are not eaten because they are quite bitter, but the leaves and flowers, which have a sour taste similar to cucumber, are edible.
The flowers do not support cooking unlike the leaves.
Both are therefore cooked raw, to enhance salads or other cold dishes.
