Sunshine egg cups- perfect for guests or on the go breakfast
Sunshine egg cups are easy to make and very delicious! Perfect for guests or as an on the go breakfast! To make you need a cupcake or muffin pan, nonstick cooking spray, eggs, and ham lunchmeat. Spray cupcake or muffin pan with nonstick spray, coating bottom and sides. Line each cup with a piece of lunchmeat(I used 2 as my slices were thin). Next crack an egg onto each cup on top of lunchmeat. Bake at 400 for 12-14mins until eggs are solid. Serve alone or with sides. Serve along with biscuits or make into biscuit sandwiches. Perfect for guests or as an on the go breakfast! Enjoy!
Note: I have also used turkey bacon in place of lunchmeat. This is my preferred way. You can also use english muffins instead of biscuits. Both ways are very delicious!
