Chicken & Asparagus in Cheese Sauce
You can turn it into Cheesy Chicken Florentine by using spinach instead of asparagus.
You can use string beans if you wish. That is a preference and what is available at the time.

2 chicken breasts with skin (or not preference)
2 tblsp of oil
1 pound asparagus blanched (dipped in boiling water for 1 minute then rinsed in cold water)
4 tblsp butter
4 tblsp flour
1.5 cups (12oz) milk
1/2 pound cheese (8oz preference)
1tsp salt
1tsp pepper

Heat large pan on high. When droplets of water dance on it the pan is hot enough.
Dry off your chicken breasts. Salt the skin side then place it in the pan skin side down.
Salt the other side.
Wait - listen - look gently push on it - if it sticks wait. If not then flip. Flip when it no longer sticks to the pan. It will be golden brown. Repeat for the other side.
You are using your senses and your love - your attention - to cook. That is YOUR role. The one in your heart is doing the cooking. The same intelligence the 5 star chef uses is the same intelligence doing it for you too.
Remove and place on plate to rest.
Heat oven to 350 degrees F
Throw asparagus into the pan on the stove and toss with salt and pepper. Remove and place in a baking dish. Lower the heat to medium low. Time for some loving.
Melt the butter in the pan
Put in flour and cook and stir - loving on it - until it smells like toast
Put in the COLD milk
Stir. When it bubbles turn off the heat.
Put in cheese and stir until smooth
Place chicken on top of asparagus in baking dish
Any juices on the plate where the chicken breast was resting goes into the sauce and is stirred in
Pour over the chicken and asparagus in the baking dish and cover with foil

At this time you can freeze it or put in the fridge and not bother heating up the oven. Depends on you of course.

Bake in oven 15 minutes
Remove foil and bake another 5 minutes
Take out and set aside to rest 5 minutes
Remove chicken breasts and slice
Place asparagus on the plates
Place chicken on top
Stir the sauce and pour out evenly on top of the chicken onto all 4 plates

Chicken - $1.50
Asparagus - $0.70
Oil - $0.40
Butter - $0.40
Flour - $0.30
Milk - $1.20
Cheese - $2.00
Salt - $0.20
Pepper $0.30
Total - $7.00 or $1.75 per plate

Now say thank you as you eat that delicious 5 star Michelin meal that was cooked for you and all you had to do was prep - read and set the stage - then give it some loving attention using your senses.
