ROASTED RED PEPPER HUMMUS!! FAST FRESH AND FLAVORFUL!!

Today we are going back to the Mediterranean to enjoy some fast, fresh and flavorful roasted red pepper hummus! This is so easy to make its kind of unbelievable, but it is so delicious that you will want to put this on everything! I am using canned garbanzo beans but you can cook them from dried if you prefer. The canned version make this super fast and when you can toss everything in your food processor, even better! I know that my family loves this as a dip or spread and I know your family will love this protein packed delight as well!

Hummus can be made simply with just garbanzo beans, olive oil, lemon juice and salt. You can add in roasted garlic, or roasted red peppers or lots of fresh herbs from your garden like mint, oregano and basil. You can even make chocolate dessert hummus that is to die for but today we are focusing on the most popular version in my house, the roasted red pepper hummus! There are just a few ingredients that when combined make a delicious dip or sandwich spread that is restaurant worthy!

I used 2 cans of garbanzo beans, drained and rinsed, Wazzed them up in my food processor and then added all the rest of the ingredients. Roasted red pepper strips from a jar, copious amounts of minced garlic, lemon juice, olive oil and tahini which is sesame paste. Then we go in with some flavorizers, i.e. seasonings; salt, pepper, onion powder, cumin and smoked paprika. If you like yours on the spicy side, go ahead and toss in 1/4 to 1/2 teaspoon of Cayanne pepper or a generous shake of your favorite hot sauce will do as well.

If you don't have, can't find or don't want to buy tahini, you can easily sub it out for unsweetened, natural (the kind with the oil on top) peanut butter, almond butter or sunbutter (made from sunflower seeds). Just make sure they are unsweetened. The tahini is integral to flavor and texture of the hummus. If using the alternative ingredient it may taste a little different but not much but if you leave it out it just won't be the same.

Blend all of this up together for a good minute in the food processor until everything is nice and smooth and well combined. Then it's time to pop it in a bowl and serve it up! I like to top mine with a generous sprinkling of smoked paprika and a drizzle of olive oil. Today I am presenting mine with some crispy pita chips.

This hummus is a great option to have on hand in your fridge. We love it as is to dip fresh veggies like carrots, baby peppers, cucumbers etc. We also love to use this as a spread on sandwiches and wraps. This hummus is full of protein and flavor and I think its a great way to get kids to eat nutrition dense foods because kids love to eat anything they can dip into.

This can also become part of a lovely Mediterranean Mezze platter along with the Tzatziki we made in a previous video and a selection of fresh veggies, like grape tomatoes, baby peppers and Persian cucumbers as well as marinated artichoke hearts, mushrooms and cubes of marinated feta cheese. Serve this on a platter along with soft pita wedges and crunchy pita chips and you have a delicious appetizer that can be quickly thrown together at a moments notice when friends drop by to visit.

I love the essence of Mediterranean cuisine. Especially during the summer. It is cool and refreshing, quick to make and can be eaten communally and enjoyed by everyone. I think this is a great way to serve family and friends with a welcoming atmosphere.
