Today we're making a very simple blueberry crumble cake. Dough: • I'm using a 140x280 baking pan • 150 grams cold butter • 300 grams wheat flour • 1 egg • 1-2 tablespoons powdered sugar • a pinch of salt Berry filling: • 300 grams blueberries • 1 tablespoon cornstarch • 1-2 tablespoons sugar To make the dough, mix cold butter and flour (add salt and powdered sugar to the flour beforehand), rub into fine crumbs, then add the egg and mix everything with your hands, no need to gather the dough into a ball. Spread 2/3 of the crumbs in the pan, level and press down with a spoon or the bottom of a glass. Then add the berries mixed with starch and sugar and the rest of the crumbs on top, pressing down slightly. You can decorate the top with almond flakes and sugar. Bake in a preheated oven at 175 degrees Celsius for 40 minutes. If it browns too much on top, cover with foil. Delicious, fragrant and crumbly cake is ready, let it cool slightly in the mold and you can serve it to the table. Enjoy!

It is eaten all over the middle east! You can feel free to use store bought pitas if you want to make this even quicker. I recommend a 20% beef fat mix as this has a lot more flavour, lamb is also super good to replace the beef if you wish! enjoy :) (6) Filling: 500g beef/lamb mince 3 garlic cloves minced 100g finely chopped parsley 1 small brown onion grated/finely diced 1 jalapeno diced 1 tsp ground ginger 1 tsp ground green cardamon 1 tbsp black pepper 1/2 tbsp salt 1 tsp garlic power 1 tsp onion powder 1/2 tsp nutmeg 2 tsp allepo chili pepper 1 tsp smoked paprika 2 tsp extra virgin olive oil Sauce: 200g greek yoghurt 50g chopped parsley 1/2 tsp salt 1 tsp black pepper 1 tbsp extra virgin olive oil 1 garlic clove minced Pita breads (1) Make your filling by combining all the ingredients in a large bowl. Mix well and let rest in the fridge for at least 30 minutes but even better overnight. (2) Make your dipping sauce by combining all the ingredients in another bowl, mix well and let rest in the fridge for a minimum 30 minutes to allow the flavours to fuse together. (3) Now slice your pita bread in half and gently open them up, fill them up with the mixture then set aside. You will be able to make 6 Arrays with this recipe! Now heat up a grill pan and oil it well, then once very hot, add the arayes one by one and cook for roughly 30 seconds on each side, ensuring you get those grill marks all over. Once seared nicely, remove and place in a preheated oven at 180C and bake for 10 minutes until the meat is fully cooked and the bread is crispy. Ingredients 6 eggs 1 cup sugar 300g mascarpone cheese 300ml whipped cream 3 packages of ladyfingers 1 cup strong coffee Chopped dark chocolate Amaretto liqueur to taste Instructions Beat the egg whites until stiff peaks form. Gradually add half a cup of sugar while beating. Beat the egg yolks with the remaining half cup of sugar until pale and doubled in volume. Fold the mascarpone cheese and whipped cream into the egg yolk mixture until smooth and creamy. Gently fold in the beaten egg whites. Briefly dip the ladyfingers in the coffee mixed with amaretto. In a serving dish, layer the ladyfingers, cream, more ladyfingers, and more cream. Refrigerate for at least 4 hours, or preferably overnight. CANDIED LEMONS 3-4 lemons 250 ml water 250 grams sugar MASCARPONE CREAM 2 lemons 400 grams mascarpone 250 ml fresh whipping cream 4 egg yolks 70 grams sugar 50 ml limoncello 20 ladyfinger biscuits INSTRUCTIONS Candied Lemons: Start with the candied lemons. Thinly slice the lemons and then heat a pot of water to boiling. Dip the lemons in the boiling water for 1 minute and drain. In a separate pot, heat the sugar and water until boiling. Add the lemon slices and simmer for about 30-40 minutes. Drain, let cool, and chop finely. Reserve the syrup. Cream: Zest 1 lemon and add the zest to the sugar. Rub with your fingers to release the lemon aroma more quickly. In a bowl, add the egg yolks and the sugar/zest mixture. Whisk until the mixture lightens in color.
