Patty's Corn Muffins (Gluten Free) recipe is delicious! No need for wheat flour, no rice, no soy, no dairy. Though with butter they really are terrific! Ingredients: 1 cup medium grind corn meal 1 cup whole grain corn flour ½ cup coconut flour ¼ cup sorghum flour ¼ cup sugar 3 Tbsp tapioca flour 2-1/2 tsp baking powder ½ tsp xanthan gum ½ tsp salt ¼ tsp baking soda 2 cups to 2-1/4 cups coconut milk 4 Tbsp psyllium hulled husks powder ½ cup high heat cooking oil Optional: 15 oz. corn with 3 Tbsp water 2 Tbsp chili powder Recipe created by Patty F.
