Chicken Finger Pizza Roll
ngredients for chicken fingers:
1 c Italian style bread crumbs
2 eggs
1 c flour
1/2 c milk
4 chicken tenderloins
Olive oil
Ingredients for pizza:
1 pkg pizza dough (in biscuit section at grocery store)
2 c marinara sauce
1/2 c parmesan cheese
3 TBSP minced garlic
1/2 sliced red peppers
1/4 c diced onion
3 TBSP fresh basil
2 TBSP rosemary
2 TBSP chives
1/4 c diced mushrooms
any other desired pizza toppings
6 mozzarella/havarti/muenster cheese slices
Directions:
One at a time, dip chicken tenderloins in the following order: Milk, flour, egg, and finally breadcrumbs. In saucepan, cook breaded chicken on medium low heat, cooking until golden brown, being sure to cook chicken thoroughly. Remove from heat, set aside.
On deep cookie sheet (with lip), dust flour. Roll out pizza dough just slightly, staying at least 1/4" thickness. Spoon marinara onto dough, then even out leaving at least 1" border. Add parmesan, garlic, red peppers, onion, basil, rosemary, chives and mushrooms evenly over dough. Add any other desired toppings. Place half of the cheese slices evenly, then in two lines, place chicken fingers (2 per line) on top of cheese slices. Place remaining cheese slices on top of chicken fingers. Begin neatly rolling entire pizza into large roll, making sure to keep all items inside roll. Tuck corners and seams, being careful to retain dough thickness. Brush well with minced garlic and melted butter.
Bake at 375F for 28-35 minutes, watching closely for last 5 minutes. To be sure roll is thoroughly cooked, check small corner underneath roll. Let cool for a few minutes.

Cherie's Baked Brie
Ingredients:
10 sheets thawed Phyllo Dough
1 wheel Brie cheese
***1/4 can cranberry sauce with fruit
caramel syrup
2 TBSP brown sugar
melted butter
Preheat oven to 400 degrees F.
Lay a sheet of phyllo dough horizontally on a smooth, dry surface. Brush with melted butter. Place another sheet on top. Layer with butter. Continue until you have five sheets on top of each other. Layer the remaining sheets vertically. Make sure to butter each sheet.
Place brie in the center of the sheets and top with raspberry preserves. Fold sheet corners over the brie. Sprinkle brown sugar over top of dough. Place on a cookie sheet and bake at 400 F/ 200 C between 25-30 minutes. ***Allow to cool slightly; Top with 2 TBSP cranberry sauce, and drizzle caramel sauce. Enjoy.
***NOTE: changes to recipe indicated by (***) include name and replacing raspberry preserve for cranberry sauce, adding toppings.

Cheesy Garlic Artichoke Pull-Apart Bread
Ingredients:
1 loaf artisan bread
1 5/8 sticks butter
5 mozzarella sticks
9 slices bacon
1/4 cup ricotta cheese
1 can quartered artichoke hearts
1 tbsp garlic
1/4 cup green onion
1 tbsp rosemary
handful parmesan cheese
Directions:
Preheat oven to 350°. In a baking pan, cut loaf of bread into small 1"x1" squares, while keeping the bottom of the bread connected. Take 1 1/2 stick butter and place in between the bread squares. Then wrap each mozzarella stick in a slice of bacon and place in between bread squares.
In a bowl, combine ricotta cheese, artichoke hearts, garlic, green onion, and 1/8 stick butter. Press this mixture into the loaf of bread, making sure that it is pressed into the inside of the loaf. Top bread with rosemary, remaining 4 strips of bacon, and parmesan. Bake in the oven for 25 mins then enjoy!

Buffalo Chicken Ring
whole chicken or 3 chicken breasts, cooked
half a red onion
tsp of crushed garlic
3/4 cup buffalo sauce
1 cup shredded mixed cheese
2 pkg crescent rolls
8 provolone cheese slices
garlic herb butter
sour cream or plain Greek yogurt for dipping
Directions:
Heat oven to 375°. Sauté red onion and garlic. Remove from heat. Cut up whole cooked chicken into cubes. In large bowl, mix onions, garlic, chicken, buffalo sauce and shredded mixed cheese.
On greased cookie sheet, put a medium bowl in the center of the ring and place crescent dough strips around the bowl. Remove bowl. Place provolone cheese slices towards the center. Spoon chicken mixture on top of the provolone cheese. Fold pastry from outer ends towards the middle, covering the cheese and chicken mixture. Brush garlic herb butter over top of crescent pastry. Place Buffalo Chicken Ring on center rack in the oven and cook until golden brown (approximately 20-30 minutes).
Enjoy with Sour Cream, Plain Greek Yogurt or Ranch dressing in a bowl, in the center of the ring!

Buffalo Chicken Bread Pull
Ingredients:1 package biscuit dough
1 cooked chicken (shredded)
1 cup shredded mozzarella
3/4 cup buffalo sauce
Directions:
Preheat oven to 375°. In greased casserole dish, layer bottom with cut up biscuit dough. Spread Buffalo sauce and shredded chicken over dough. Top off with cheese. Bake on middle rack for 30-40 minutes, or until dough is fully cooked. Yummy!

Balsamic Goat Cheese Flatbread
Preheat oven to 350°. In a frying pan, drizzle olive oil and add 1/2 cup of onion and 1/4 cup of garlic. Sautée until softened, then add 3 tbs of balsamic vinegar. Continue to sautée for 5-7 more mins. On a baking sheet, place garlic or original flatbreads and spread herbed goat cheese. Place the sautéed onion and garlic and top it off with some fresh basil. Place your flatbreads in the oven and bake for 20 mins. Yuuum!

Bacon Wrapped Brussel Sprouts
Ingredients:
12 oz package of maple bacon
24 Brussel Sprouts
Salt and Pepper (optional)
Directions:
Preheat oven to 350°. On a cutting board, cut off the ends of your brussel sprouts. Wrap each cut brussel sprout with a strip of bacon and hold it all together with a toothpick. Place wrapped sprouts onto a baking pan and bake for 30 mins.

Bacon & Egg Quiche
Ingredients:
Pie crust
5 eggs
1 cup of milk
1/2 cup diced potato
1/2 cup diced onions
2 tbs chives
1 cup of spinach
1 cup of shredded cheese
2 tsp crushed garlic
1/4 cup sliced peppers
2 tsp parsley
1/2 cup of mushrooms
4 slices of bacon
Cherry tomatoes for decoration
Salt and pepper to taste
Cooking oil
Directions:
Heat oven to 375°. Heat skillet on medium and pour 3 tbs of cooking oil. Add potatoes until soft then add onion and garlic. Set aside.
In mixing bowl, beat eggs. Add milk and whisk. Add remaining ingredients except bacon and cherry tomatoes. Pour mixture into pie crust and cook for 40 minutes.
Take out of oven and decorate with bacon and cherry tomatoes and cook for additional 20 minutes. Serve warm.

Bacon & Cheese Ball
Ingredients:
1 package cream cheese
1/2 cup candied walnuts
1 package ranch dressing mix
1/2 lb bacon bits
Directions:
Mix all ingredients together (except for 1/2 cup of bacon) in large bowl and form into ball. Place in refrigerator to harden. Once hardened, press bacon bits into cheese ball and place on plate with crackers. Enjoy!

Easy Bacon & Egg Muffins
Preheat oven to 350°. Crack 10 eggs into a large mixing bowl. Chop 1/4 cup of green onion and pour into the large mixing bowl. Add 1/4 cup of heavy whipping cream and with a hand mixer, whip the mixture until frothy.
On your muffin pan, spray a coat of oil and wrap your strips of bacon on the sides of the tins. Then take your egg mixture and pour it in the tins. Sprinkle parmesan cheese on top of each tin then place the pan into the oven for 25 mins.
Voila! You have tasty bacon wrapped egg muffins!

Cucumber Avocado Salad
Ingredients:
2 English cucumbers
salt
1/2 diced red onion
red and orange bell pepper
2 limes
1 tbs white sugar
1/2 tsp curry powder
hot pepper sauce
1/4 cup parsley
Directions:
Slice English cucumbers. In a salad bowl, mix together diced red onion, chopped red and orange red bell pepper, lime juice, sugar, curry powder and hot pepper sauce until thoroughly combined (and the sugar has dissolved). Stir the cucumbers into the salad. Gently toss the a chopped avocado and parsley into the salad. Serve and enjoy!
