CWI: Cooking While Intoxicated - Cheese Enchiladas, Sangrita and Salsa Verde
This episode, we go south of the border. The menu starts with Sangrita (not Sangria), a spicy sipper to go with straight tequilas.
We next make a batch of salsa verde, with tomatillos, fresh serrano chiles, cilantro, etc.
And finally, we make red enchilada sauce from scratch, roll up the enchiladas and bake them up. This recipe makes a LARGE batch, so make sure to invite friends over for drinks and dinner!

CWI: Chicken & Andouille Sausage Gumbo
This is my take on a classic New Orleans favorite, Chicken and Andouille sausage gumbo.
I take you through the seasoning mix, the trinity of veggies, and making a roux (or cajun napalm as I like to term it).
My chicken and sausage gumbo recipe is based from cooking out of Paul Prudhomme's first cookbook, I started doing seasoning blends from him, one of my cooking idols, and have made this my own.

I'm still trying to learn lighting, color balance...and color correction/grading, unfortunately, Davinci Resolve roundtripping with FCPX is broken, so had to do the best I could with FCPX tools.

CWI: Zucchini Noodles (Zoodles) & Puttanesca Sauce
This episode explores a fun new kitchen toy, a spiralizer and we're using it to make Zucchini Noodles aka "Zoodles".
We're serving it with an interesting and spicy Italian sauce of Puttanesca.
The drink of the episode is "Blood and Sand", one of the very few scotch based cocktails.
ON the Photography side, I've been having fun learning to do some Green Screen work in After Effects for this episode, and I'm also using Davinci Resolve 11 for the color correction and grading.
This episode dedicated to my beloved little pup, Bailey whom I lost this past June (2015). She was absolutely the best help in the kitchen (or any other project I was up to) ever.

CWI: Cooking While Intoxicated - Aw Nuts
Well, has been WAAAY too long since my last episode, life just gets in the way sometimes. I plan to put more out more often going forward.
In this episode, I start out making my version of the classic cocktail, the Manhattan.
I next show a couple of great, simple and quick roasted nut recipes. First, I do a spicy/sweet roasted pecan recipe, and next I do a quick one with walnuts that has rosemary as an unusual but tasty ingredient. Both of these I discovered while looking into recipes that would fit into the Paleo/Primitive, or even the almost all vegetarian lifestyle promoted by Dr. Fuhrman in his book Eat To Live.
Make sure to watch past the end credits (short) so you can see some outtakes I did at the end.
This was shot on my canon 5D3. Mostly all Canon lenses. I color graded with Davinci Resolve Lite v11. I used Final Cut Pro X to do my primary editing, and used Adobe After Effects CS6 to do some spfx and titles (motion tracking, etc).,
