Ingredients
To marinate chicken
Boneless Chicken - 200 gms
Pound Ginger & Garlic - 1 tsp
Hung Curd - 2 tsp
Juice Of 1/2 Lemon
Kashmiri Chili Powder - 1 tsp
Garam Masala - 1/2 tsp
Salt - 1/2 tsp
Oil - 1 tbsp
To make masala paste
Butter - 1 tbsp
Oil - 1 tbsp
Onion - 2 nos. (chopped)
Pound Ginger & Garlic - 1 tsp
Tomato - 3 nos. (chopped)
Kashmiri Red Chili - 3 nos.
Salt - 1 tsp
Cumin Powder - 1 tsp
Coriander Powder - 1/2 tsp
Garam Masala - 1 tsp
Water - 2 tbsp
Cashew Nuts - 10 nos.
Water - 1/4 cup + 1/2 cup
To make butter chicken
Butter - 2 tbsp
Kashmiri Chili Powder - 1 tsp
Water
Fresh Cream - 1/4 cup
Kasuri Methi
Coriander Leaves
Method:
1. To a bowl, add the boneless chicken pieces, pound ginger garlic, hung curd, lemon juice, red chili powder, garam masala and salt
2. Mix everything well, and marinate the chicken for about 30 minutes
3. Heat a pan and add oil
4. Fry the marinated chicken pieces mixture till they are cooked and keep it aside
5. In a pan heat oil and butter, add onions and saute them till they are transparent
6. Add the pound ginger garlic and mix it well. Then add tomatoes saute them.
7. Add kashmiri red chilies and saute.
8. Add salt, cumin powder, coriander powder, garam masala powder. Add some water and cook till the tomatoes are mushy.
9. Then add cashewnuts and saute for 5 mins. Cool down the cooked masala and grind it to a fine paste by adding water.
10. Heat the same pan, add butter, red chili powder and keep the flame on low. Add the ground puree to the pan. Saute and add water.
11. Add the fried chicken pieces and mix it well. Add fresh cream mix it and simmer the gravy for about 10 minutes by closing the kadai.
12. Finally, add crushed kasuri methi and coriander leaves and mix well
13. Serve the Butter Chicken hot with naan, roti or pulao.

Ingredients
For the chicken
300 gms Chicken breast boneless
1 tbsp Ginger garlic paste
1 tbsp Red chilli powder
Salt to taste
Oil to pan fry
For the gravy
500 gms roughly slit tomatoes
100 gms roughly cut onions
1 tbsp garlic paste
50 gms cashew
1 tsp kasoori methi
1/2 tsp garam masala
4 tbsp sugar
2 tbsp kashmiri chilli powder
5 tbsp butter
3 tbsp cream
2 tbsp malt vinegar / 1.5 tbsp White Vinegar
Salt to taste
Method
- Marinate the chicken with ginger paste, garlic paste, red chili powder, and salt and keep it aside for 15 to 20 minutes
- In a pan heat, some oil then fries the marinated chicken pieces in it, once done place it into a bowl.
- In the same pan add onion, oil, a spoonful of butter and once the onions are cooked add tomatoes and cashew nuts
- Add some water and garlic paste, salt, malt vinegar, sugar, garam masala powder, and chili powder. Evenly mix it and let it simmer for 15-20 minutes
- Churn the mixture into a fine puree.
- Strain it back into the same pan make sure there is minimal wastage.
- Add butter, cream, chicken and kasoori meethi and let it simmer for 5-7 minutes.
- Garnish it with cream and kasoori meethi
Butter Chicken is ready to be served!

Ingredients
For rice
300 gms basmati rice
2 litres water
Salt as required
2 tbsp ghee
1 tsp oil
1 bay leaf
2 green cardamom
1 black cardamom
1 inch cinnamon
8 black pepper corn

For chicken
3 tbsp oil
2 tsp ghee
2 no peeled potatoes
3 green cardamoms
1 black cardamom
4 cloves

Marination of chicken
600 gms chicken
Salt as required
1/2 tsp turmeric
1 tbsp chilli pwd
1 cup dahi
1 tbsp ginger-garlic paste
1 large onion (golden fry)
1/2 cup chopped tomatoes
Water as required
2 boiled eggs
Garnish
1 large onion (golden fry)
Mint leaves
Method
- In a pan heat oil then some ghee and once it heats well, add garam masala and peeled potatoes and cook until the potatoes turn golden brown
- Marinate the chicken by adding yogurt, ginger garlic paste, salt, turmeric powder, red chilli powder, fried onions and tomatoes mix it nicely.
- Add the marinated chicken into the pan and mix well, then add water.
- Cover it with a lid and cook on medium flame till its done
- In a pan add ghee and oil once it heats up add garam masala,lower the flame and add water and salt.
- Add the washed and soaked rice to the boiling water and let it cook on high flame. When it's 3/4th cooked drain the rice
- Place two boiled eggs and rice into the chicken and cover with lid on it and cook it on high flame for 8 minutes and low flame for 2 minutes
- Garnish it with fried onions, fresh mint and fresh onion.
- Chicken Biryani is ready to be served

Tandoori Chicken Ingredients
- 1 whole chicken, cut in 10-12 pieces
- 200 gms Dahi/Curd
- 1 tbsp Butter
- 1 tsp turmeric powder
- 2 tbsp red chilli powder
- Salt to taste
- 2 tbsp oil
- 1 piece of charcoal
- ginger garlic paste
- Garnish
- Coriander leaves
- onions slices,

Method
- Make some deep cuts into the chicken pieces
- For marination add yogurt, red chilli powder, ginger garlic paste and salt to taste.
- Keep aside the marinated chicken for 30 minutes
- In a pan add some oil and salted butter, place the chicken pieces in the pan
- Cook each sides properly until you get nice golden brown colour, cook for 10-12 minutes
- Heat the charcoal until its red in colour
- In the bowl where the tandoori chicken is placed, keep a small steel glass and place the coal in it and add some oil and cover the lid.
- Garnish it with coriander leaves, onion and lemon
- Tandoori Chicken is ready to be served!

Ingredients for Chicken Tikka Kebab:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Boneless Chicken - 500 gms (cut into 2” tikka pieces)
1st Marinade:
- Salt- 1 tsp
- Lemon Juice-2 tsp
- Ginger Garlic Paste- 1 tbsp
2nd Marinade:
- Hung Curd- 5 tbsp
- Turmeric Powder- a pinch (1/8 tsp)
- Kashmiri Chilli Powder- 5 tsp
- Garam Masala Powder- 3/4 tsp
- Kasuri Methi(Fenugreek Leaves), dry roasted & powdered- 1/2 tsp
- Salt- a pinch (1/8 tsp)
- Red Food colour- a pinch (optional)
- Cooking Oil- 2.5 tbsp
Other Ingredients:
- Cooking Oil- 2 tbsp
- Piece of charcoal (for infusing smoke to the marinated chicken for a barbecue flavour)
- Ghee- 1 tsp
Preparation:
- To prepare the hung curd, strain the water from the curd or plain yogurt using a strainer or cloth to have a thick curd without any water. This may take 1.5 to 2 hrs, so plan accordingly.
- You can use chicken tikka pieces or alternatively cut boneless chicken fillets into tikkas.
- Wash and pat dry the boneless chicken fillets. Cut into 2” tikka shapes.
Marination:
- For the 1st marinade, add all the ingredients, mix well and set aside for 30 mins.
- To prepare the 2nd marinade, add all the ingredients specified above in a bowl.
- Whisk everything together and then add the marinated chicken pieces without the water that has released from the chicken. Mix everything well so that the chicken tikka pieces are well coated with the marinade.
- Now infuse the marinated chicken pieces with smoke using a burning coal to give a tandoor flavor to the chicken.
- For that keep a small bowl in the marinade to put the coal piece.
- Now take a small piece of coal & keep on gas flame till it has red embers.
- Hold it with a kitchen tong & place it in the small bowl.
- Add 1 tsp of ghee on the coal. It will start to smoke. Cover the bowl immediately with a lid or plate so that the smoke remains inside the bowl. You can remove the coal after 30 mins.
- Set aside to marinate for 3-4 hours in the refrigerator. Take out the marinated chicken from the refrigerator 30 mins before cooking.
Process:
- Heat 2 tbsp oil in a pan and arrange the marinated chicken tikkas side by side. Don’t crowd the pan, make it in 2 batches.
- Fry on high heat for 2 mins, flip the tikkas on the other side and continue to fry on high heat for 2 mins on the other side.
- Flip again on the other side and continue to fry on medium heat for 3 mins on each side. Baste the chicken pieces with oil in the pan on both sides while the chicken is being fried.
- Repeat the above steps for the next batch too.
- Serve as an appetizer.

RECIPE
INGREDIENTS:
450g/1 lb chicken breasts
6-8 cloves of garlic
2 tbsp unsalted butter
2.5 tbsp all purpose flour
2 tbsp neutral flavoured oil
1 tbsp oregano
1/2 cup chicken broth (sub: 1/2 cube chicken stock cube + 1/2 cup water)
1 tsp lemon juice
Parsley (or preferred herb)
PROCESS:
1. Cut 450g/1 lb chicken breasts into bite sized pieces. Add 1/2 tsp salt, 1/2 tsp pepper and set aside for 15 minutes
2. Mince 6-8 cloves of garlic
3. Evenly coat chicken pieces with 2 tbsp of all purpose flour. This helps keep the chicken crispy on the outside without overcooking it
4. On medium flame, pan fry chicken in 2-3 tbsp of neutral flavoured oil until cooked through. Don't overcrowd the pan. Cook chicken in batches if required
5. Chicken should be done in 4-5 minutes. Check a piece to ensure it’s cooked properly
6. On low flame, sauté garlic in 2 tbsp unsalted butter until fragrant
7. Add 1/2 tbsp all purpose flour and sauté for 30 seconds
8. Mix in 1 tbsp oregano, 1/2 cup chicken broth and 1 tsp lemon juice and stir well
9. Simmer until the sauce thickens
10. When the sauce has thickened, add 1/2 tsp black pepper and fried chicken
11. Mix until chicken is coated in the sauce and warmed
12. Take off the flame and garnish with parsley or any preferred herb

SUBSTITUTES:
• No chicken broth?
Use 1/2 cube chicken stock cube or powder with 1/2 cup water
• No oregano?
Use thyme, tarragon or Italian seasoning
• No lemon juice?
Lime juice or apple cider vinegar works too

TIPS:
• Use unsalted butter as chicken broth or stock cube have added salt
• Serve immediately or the flour coating will turn soggy
• Don't overcrowd the pan while frying the chicken or it won't brown properly

1 medium onion
1/2 cup chicken stock or water
1 tsp lime juice
1/2 cup heavy cream (sub fresh cream)
Olive oil
Butter
1 tsp dried oregano
1 tsp dried parsley
Salt and pepper (as needed)
*1 chicken stock cube (if using water)

FAQ:
• Why lime juice?
As wine is not used in this recipe, lime juice is added for acidity (sourness). Otherwise the sauce might seem too rich
• When to add salt to the sauce?
Add salt towards the end as stock/stock cubes have added salt. I did not find the need to add more salt
• What else can be added to the dish?
Mushrooms, broccoli, bacon, spinach and parmesan cheese can also be added for additional flavor
• What to pair with the dish?
Pasta, steamed veggies, mashed potatoes, rice, couscous or crusty bread.

• Chicken stock can be substituted with white wine as well. Omit lime juice if using white wine
• The entire sauce needs to be cooked on low flame so as to prevent it from splitting

230 g de boeuf haché
1 oeuf
sel au goût
poivre noir au goût
paprika
bien mélanger
50g d'oignon haché
15g d'oignon vert
15 ml d'huile d'olive
Bien mélanger
Tortilla(23cm)
Plier et déplier la tortilla en deux
Prenez quelques-unes des garnitures de viande
Mettre la garniture sur la tortilla
Répartir uniformément le bœuf sur la moitié de la tortilla
Saupoudrez un peu de mozzarella
Plier la tortilla en deux
Tortilla(17cm)
Vous pouvez également le faire avec des tortillas plus petites
Plier puis déplier en quatre
Coupez la tortilla comme ceci
Répartir la garniture de boeuf sur 3/4 de la tortilla comme ceci
Pliez la tortilla comme ceci
Répéter

Frire la tortilla pendant 5 minutes

Placer les petites tortillas dans la poêle
Frire pendant 5 minutes
Badigeonner d'huile sur le dessus
Retourner puis faire frire pendant 8 minutes
Ajouter 1 cuillère à soupe d'eau dans la casserole
