Betty's onion rings of fire
Betty demonstrates how to make Onion Rings of Fire. The “fire” of these onion rings comes from having serrano peppers, cayenne pepper, and Tabasco in the batter.
Onion Rings of Fire
2 Vidalia onions (or other sweet onion)
1 ½ cups all-purpose flour, divided
2 serrano chile peppers, minced
1 to 2 teaspoons salt (just to taste)
1 teaspoon cayenne pepper
½ teaspoon freshly ground black peppercorns
1 cup beer
1 tablespoon Tabasco sauce
1 inch of peanut oil in a heavy pot
coarse salt, for sprinkling over finished onion rings
Peel onions and slice into ¼-inch slices. Separate into rings and set aside. In a medium-sized mixing bowl, place 1 cup of the flour, placing the remaining ½ cup flour in a bowl to be used later in the recipe. To the 1 cup flour, add serrano chiles, salt, cayenne pepper, black pepper, beer, and Tabasco sauce. Whisk together. Heat 1 inch of peanut oil in a heavy pot over medium heat to 350 degrees (F). Use tongs to dip individual onion ring into flour, coating well. Dip flour-coated ring into batter, coating well. Shake off excess batter. Drop batter-coated ring into hot oil and fry until golden on top and bottom, turning once during the frying process. Repeat this procedure with the rest of the onion rings, frying a few at a time. Place finished onion rings on paper toweling to drain and sprinkle them with coarse salt. Transfer to a nice serving dish. These are great with hamburgers or steak! --Betty :)

Betty's appetizer salmon ball
Betty demonstrates how to make an Appetizer Salmon Ball. This is a simple and elegant appetizer made from canned salmon and cream cheese.
Appetizer Salmon Ball
1 can (about 16 ounces) pink salmon, drained, with skin and bones removed
8 ounces cream cheese, softened
1 small onion, minced
2 tablespoons lemon juice
½ cup minced parsley
¼ cup finely chopped pecans
Use 2 forks to flake the salmon in a medium-sized bowl. Add cream cheese and mash with a fork until well blended. Add onion and lemon juice. Mix well. Shape into a ball, enclose in plastic wrap, and chill until firm. Sprinkle parsley and pecans on waxed paper. Mix well. Roll salmon ball in parsley/pecan mixture until well coated. Cover and refrigerate until serving time. Place salmon ball in center of platter and surround with assorted crackers. Serve and enjoy! --Betty

Tomato, Cucumber, and Avocado Salad
1 pound fresh roma tomatoes, chopped
1 medium cucumber, chopped
½ medium red onion, sliced into half-slices
2 avocados, chopped
¼ cup fresh cilantro, chopped
2 tablespoons light-tasting olive oil
2 tablespoons lemon juice
freshly-ground coarse sea salt, to taste
freshly-ground black peppercorns, to taste
Place prepared tomatoes, cucumber, avocados, red onion, and cilantro in large salad bowl. Drizzle with olive oil and lemon juice. Season with freshly-ground salt and pepper. Toss gently. Betty's crispy crust baked chicken breasts
Betty demonstrates how to make Crispy Crust Baked Chicken Breasts. This recipe makes crust-ed chicken that is baked, not fried.
Crispy Crust Chicken Breasts (Baked)
3 pounds uncooked boneless, skinless chicken breast meat, trimmed and cut into serving-sized pieces
salt and pepper, to taste
mayonnaise, as needed to cover chicken
finely-crushed cornflakes, as needed to cover chicken
cooking oil spray
Season chicken pieces lightly with salt and pepper on top and bottom. With a pastry brush, coat chicken pieces with mayonnaise (top and bottom and all around). Roll pieces in finely-crushed cornflakes, pressing down to make the coating stick to the chicken. Place coated chicken pieces in a 10-inch by 15-inch by 1-inch baking pan that has been sprayed with cooking oil spray. Bake for 1 hour and 15 minutes in a 350 degree (F) oven or until tender and no pink is showing. Serve hot or chilled. Delicious! --Betty :)

Betty's Reese's Pieces chocolate cookies
Betty demonstrates how to make Reese’s Pieces Chocolate Cookies. These cookies are made with Dutch process cocoa, and they contain candy-coated peanut butter bites. They are terrific for Halloween!
Reese’s Pieces Chocolate Cookies
1 cup all-purpose flour
2/3 cup Dutch process cocoa
1 stick (1/2 cup) butter, softened
½ cup light brown sugar, firmly packed
1/3 cup white granulated sugar
½ teaspoon kosher salt
½ teaspoon baking soda
½ teaspoon baking powder
2 teaspoons vanilla extract
1 egg
10 ounces Reese’s Pieces candy, divided
In a small bowl, stir together flour and cocoa. Set aside. In a large bowl, cream together butter, brown sugar, white sugar, salt, baking powder, baking soda, and vanilla, using an electric mixer on low to medium speed. Beat in egg, scraping down bowl, as needed. Stir in cocoa-flour mixture. Fold in all of the Reese’s Pieces, except for ½ cup. With a large cookie scoop (about 2 ½ tablespoons), drop approximately 16 scoops of dough on lightly-greased baking sheet (or baking sheet lined with a silicone pad). Gently flatten the cookies with the bottom of a drinking glass, then decorate with reserved ½ cup of Reese’s Pieces. Bake at 350 degrees (F) for about 8 minutes. Cool in pan for about 10 minutes on a cooling rack, then loosen with a metal spatula. Let cool, as desired, then place on a nice plate for serving. These are great for fall, especially for Halloween! Betty's chicken taco bake: Recipe by Tori Durham

Chicken Taco Bake
1 tablespoon olive oil
1 medium sweet onion, chopped
12 ounces sour cream, more or less as desired
16-ounce jar mild salsa (You may substitute pico de gallo salsa or similar ingredient.)
1.25-ounce package taco seasoning mix
cooking oil spray
1 pound to 1 ½ pounds cooked meat, seasoned with salt and pepper (I used chopped cooked boneless, skinless chicken breasts, but you may prefer chopped or shredded cooked sirloin steak or browned ground beef or browned ground turkey.)
10-ounce bag corn chips, such as Nacho Cheese Doritos
4 ounces shredded sharp cheddar cheese
Heat olive oil in deep skillet over medium heat. Add chopped onion and cook until onion is softened. In a medium-sized bowl, mix together sour cream, salsa, and taco seasoning. Add to onions, stirring to combine. Set aside. Spray a 13-inch by 9-inch by 2-inch baking dish with cooking oil spray. Place cooked meat evenly over bottom of dish. Pour sour cream mixture evenly over top of meat. Crush corn chips inside the bag until they are about ½-inch square in size. Sprinkle crushed corn chips over sour cream layer. Sprinkle shredded Cheddar cheese over top of corn chips. Bake at 350 degrees (F) for 30 minutes, until casserole is hot and cheese is bubbling and beginning to brown. For best results, serve while hot. This casserole is so easy to put together, and the layering aspect is a big plus. I hope you enjoy this recipe as much as my family does! Buttery Finger Cookies
2 sticks butter, softened
3 tablespoons sugar
3 to 3 ¼ cups all-purpose flour
1 teaspoon vanilla
confectioner’s sugar (This is the same as powdered sugar or icing sugar.)
In a large mixing bowl, cream butter, sugar, and vanilla using an electric mixer on low to medi-um speed. Mix in flour, a little at a time, using an electric mixer or pastry blender. As more flour is added, you may need to mix it in with your hands. Use as much of the flour as you can easily work in. Shape dough into fingers, about 2 inches long, or as desired. Place them on an ungreased baking pan. Bake at 325 degrees (F) until beginning to brown, about 10 minutes. Remove pan from oven and sprinkle cookies with confectioner’s sugar. Cool cookies slightly and then transfer them to a nice serving platter. Serve warm or cold and enjoy! --Betty

Betty's French dressing with summer salad
Betty demonstrates how to make French Dressing and Summer Salad. This is a tasty dressing over summer garden vegetables.
French Dressing and Summer Salad
1 cup sugar
1/3 cup ketchup
1 teaspoon salt
1 teaspoon paprika
1 teaspoon minced onion
1 cup vegetable oil
1/3 cup white vinegar
1 teaspoon celery seed
Fresh garden vegetables: leaf lettuce (torn), yellow bell peppers (sliced), cucumber (sliced), and cherry tomatoes(whole)
Place the first 5 ingredients in a blender. Blend until combined. Add a small amount of oil and a small amount of vinegar and blend. Repeat this process, alternating the oil and vinegar until it is all incorporated into the mixture. Stir in celery seed. Pour completed salad dressing into a jar with a lid. Screw the lid on tightly. Chill until ready to serve. When ready to serve, shake jar to re-combine oil and vinegar. Pour into a cruet or small pitcher. Serve French Dressing, drizzled over fresh garden vegetables or any tossed salad. Enjoy! --Betty :)

20-ounce can pineapple tidbits, drained
14-ounce can sweetened condensed milk
¼ cup lemon juice

8-ounce carton Cool Whip (thawed)

Betty's southern fried bologna sandwich
Betty demonstrates how to make a Southern Fried Bologna Sandwich. This sandwich has fried bologna, cheddar cheese, lettuce, and tomato inside two slices of toasted hearty white bread.
Southern Fried Bologna Sandwich (makes 1 sandwich)
2 slices hearty white bread
butter, as needed
mayonnaise, to taste
mustard, to taste
3/8-inch slice of bologna
2 slices Cheddar cheese
lettuce leaves, as desired
sliced tomatoes, as desired
pickles of your choice, as an accompaniment on plate
Using softened butter, spread the top and bottom sides of 2 slices of bread. Place them on a griddle (or skillet) over medium heat and brown each on both sides. Transfer from griddle to plate and set aside. Melt a tablespoon of butter on hot griddle. Place bologna slice on griddle and cook until brown and crisp around the edges. Turn and cook the other side. Transfer to a plate and set aside. To assemble sandwich, spread the inside of one slice of toasted bread with mayonnaise and the inside of the other slice with mustard. Place cooked bologna slice on top of mayonnaise-spread toasted bread. Place 2 slices of Cheddar cheese on top of bologna. Place lettuce leaves and sliced tomatoes over the cheese. Place the other piece of toasted bread over all with mustard side down, forming a complete sandwich. Cut diagonally, from corner to opposite corner. Serve with pickles of your choice. Betty's layered spaghetti casserole
Betty demonstrates how to make a Layered Spaghetti Casserole. This casserole is layered with spaghetti, meat sauce, and cheese, and it makes a large amount.
Layered Spaghetti Casserole
1 tablespoon butter
1 cup chopped onions
1 cup chopped green bell pepper
28-ounce can diced tomatoes, undrained
4-ounce can mushroom stems and pieces, drained
3 ounces canned sliced black olives
2 teaspoons dried oregano
1 teaspoon dried thyme
1 pound ground beef, in chunks
1 pound spaghetti, uncooked
1 teaspoon salt
2 cups shredded mozzarella cheese
1 cup shredded Cheddar cheese
cooking oil spray
10.5-ounce can cream of mushroom soup (or cream of chicken soup or cream of celery soup)
½ cup half-and-half cream
1 cup shredded Parmesan cheese
Melt butter in large skillet. Add onions and green pepper. Saute until softened. Add tomatoes, mushrooms, olives, oregano, and thyme. Stir until combined. Add ground beef, in chunks, and stir it into the mixture. Cook over medium-low heat, stirring occasionally, until ground beef is completely done, about 15 minutes. While meat sauce is cooking, cook spaghetti according to package directions, using 1 teaspoon of salt. When done, save about 1 cup of the pasta water for later use. Drain spaghetti through a colander and set aside. In a medium-sized bowl, mix mozzarella cheese with Cheddar cheese. Now, start assembling casserole. Add enough of the reserved pasta water to the spaghetti for it to separate easily, and spread ½ of the cooked spaghetti in a large 10-inch by 15-inch by 2-inch baking dish that has been sprayed with cooking oil spray. (You may use 2 smaller baking dishes, adjusting the amounts accordingly). Next, spread ½ of the meat sauce over the top of the spaghetti. Then, sprinkle ½ of the mozzarella and Cheddar cheese mixture over the meat sauce. Repeat the layers, using the other half of the spaghetti, meat sauce, and cheese mixture. Now, make a topping: In a small bowl, stir together cream of mushroom soup and half-and-half. Drizzle over top of casserole. Sprinkle top of casserole with 1 cup of shredded Parmesan cheese. Bake in a preheated 350 degree (F) oven 30 to 35 minutes, until top is beginning to brown and meat sauce has been absorbed. Remove from oven. Let sit for about 10 minutes and then serve with sliced, toasted Italian bread, sprinkled with Parmesan cheese. Add a green salad, and you have a complete meal! Enjoy! --Betty :)

Betty demonstrates how to make Rotel Mexican Pizza. This is a quick and easy way to make dinner, using canned diced tomatoes and green chiles, along with fresh produce.
Rotel Mexican Pizza
½ pound chorizo, or other Mexican sausage
10 ounce can Rotel diced tomatoes and green chiles
½ teaspoon sugar
1 can refrigerated pizza dough
½ cup chopped mushrooms
¼ cup chopped onion
½ cup chopped green bell pepper
1 cup shredded Monterey Jack cheese
Brown and drain chorizo. Set aside. Drain Rotel and add sugar. Use a blender to puree to the consistency of pizza sauce. Place uncooked pizza crust on pizza pan that has been sprayed with cooking oil spray. Spread sauce on uncooked pizza crust. 8-ounce carton sour cream
Assorted vegetables for dipping
In a small bowl, mix Italian Dressing Mix with sour cream, using ½-ounce to 1 ounce of the dressing mix, depending on how spicy you want the dip. Cover with plastic wrap and refrigerate until serving time. Betty's chocolate chip iron skillet cookie
Betty demonstrates how to make a Chocolate Chip Iron Skillet Cookie. This is a delicious and fun way to serve chocolate chip cookies.
Chocolate Chip Iron Skillet Cookie
6 tablespoons butter, softened
¾ cup light brown sugar, firmly packed
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 ½ cups semisweet chocolate chips
In a large mixing bowl, mix butter and flour, using a large spoon. Stir in egg and vanilla and mix until smooth. Combine baking powder and salt with flour and add to mixture. Stir well. Fold in chocolate chips. Grease and flour a 10-inch iron skillet. (You may use any ovenproof skillet.) Spoon batter into prepared skillet and spread until top is even. Bake at 350 degrees (F) until a toothpick inserted in the center comes out clean, about 15 minutes. Let cool in skillet for 10 minutes. Serve directly from warm skillet, or turn out onto cooling rack, cool completely, then invert the single large cookie onto a nice serving plate. Cut in wedges to serve. 8-ounce package Pepperidge Farms Herb-Seasoned Classic Stuffing Mix
2 ½ cups cooked turkey breast, cubed
(2) 14-ounce cans chicken broth
10.5-ounce can cream of mushroom soup
Spray a 13-inch by 9-inch by 2-inch baking dish with cooking oil spray. Spread dressing mix evenly over bottom of sprayed dish. Arrange turkey evenly over dressing mix. In a medium-sized bowl, stir together chicken broth and cream of mushroom soup. Pour broth mixture over layers in dish. Cover with aluminum foil and bake at 350 degrees (F) until brown and bubbly, about 25 minutes with foil on and an additional 5 minutes after removing foil. Remove casserole from oven and let it rest about 5 minutes. Serve and enjoy! --Betty :)

Betty's crustless taco pie
Betty demonstrates how to make Crustless Taco Pie. This ground beef entrée is flavored with traditional Mexican spices and topped with Cheddar cheese.
Crustless Taco Pie
1 pound lean ground beef
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon garlic powder
3 eggs
1 cup milk
½ teaspoon ground black pepper
1 cup finely-shredded Cheddar cheese
cooking oil spray
lettuce, sour cream, chopped tomatoes, chopped black olives, pickled jalapeno rings, for garnish (optional)
Spray a 9-inch deep dish pie plate with cooking oil spray. Set aside. In a deep skillet over medium heat, cook ground beef, salt, chili powder, cumin, onion powder, and garlic powder, stirring continually, about 6 to 8 minutes, until no pink is showing. Drain thoroughly. Spread seasoned, cooked ground beef evenly over bottom of pie plate. In a medium-sized bowl, beat eggs. Add milk and black pepper and stir to combine. Pour over beef. Sprinkle Cheddar cheese evenly over top. Bake at 350 degrees (F) for about 30 minutes, or until knife inserted into the center comes out clean. Remove from oven and let rest on cooling rack for 5 minutes. Cut into wedges and serve immediately. Garnish with lettuce, sour cream, chopped tomatoes, chopped black olives, pickled jalapeno rings, if desired. Delicious!

Betty's chocolate crispy cakes: Recipe from Billy Davis
Betty demonstrates how to make Chocolate Crispy Cakes. This recipe was sent in by Billy Davis. It is reminiscent of Rice Krispies Treats, but it contains melted Milky Way bars as the binder. The recipe came from a BBC Food Magazine. Thanks, Billy for sending the great recipe!
Chocolate Crispy Cakes
Ingredients:
5 Mars bars, chopped (I believe in the US, Mars bars are sold as "Milky Way" bars)
3 oz. dark chocolate (or milk/white if you prefer)
5 oz. butter, chopped, plus extra for greasing
3½ oz. Rice Krispies cereal
Method:
1. Grease a 8 inch square, deep-sided tin or oven dish with butter.
2. Suspend a large heatproof bowl over a pan of simmering water (do not allow the base of the bowl to touch the water).
3. Add the Mars bar pieces and butter to the bowl and stir until melted, smooth and well combined. The mixture will curdle at first, but keep stirring (or use a whisk) and it will eventually become smooth.
4. Remove the bowl from the heat, add the Rice Krispies and fold until coated in the chocolate mixture.
5. Spoon the mixture into the prepared tin/dish and press down to form an even layer, pushing the mixture into the corners and sides of the tin. Set aside to cool.
6. Meanwhile, suspend another heatproof bowl over the pan of simmering water (do not allow the base of the bowl to touch the water). Melt the chocolate in the bowl, then drizzle or spread it over the cooled chocolate crispy cake. Set aside to cool and harden.
7. Chill the chocolate crispy cake in the fridge until set, preferably overnight.
8. Cut into squares while still in the tin, then remove from the tin, pile onto a plate and serve.

Betty demonstrates how to make Chocolate Cream Cheese Frosting for topping the Rich Chocolate Cupcakes, a recent recipe in Betty’s Kitchen. This frosting is a standard cream cheese frosting with cocoa powder added.
Chocolate Cream Cheese Frosting
4 ounces cream cheese, softened
¼ cup butter, softened
½ teaspoon vanilla extract
8 ounces confectioner’s sugar (This is the same as icing sugar or powdered sugar.)
¼ cup cocoa powder
Place 4 ounces softened cream cheese, ¼ cup softened butter, and ½ teaspoon vanilla in a large mixing bowl and beat with an electric mixer at medium speed until creamy. Add 8 ounces confectioner's sugar and beat at medium speed until smooth and spreadable. At this point, save a small amount of frosting in a small bowl if you plan to add food coloring and decorate the top of your dessert. Spread frosting on cooled cake, cupcakes, or cookies. This frosting will be used on the Rich Chocolate Cupcakes in Betty’s Kitchen. A few of the cupcakes will be decorated for Halloween. I hope you enjoy this frosting and also the cupcakes! Savory Bagel Spread
½ tablespoon toasted sesame seeds
½ tablespoon poppy seeds
½ tablespoon dried chopped onion
½ tablespoon dried garlic flakes
4 ounces cream cheese, softened
2 freshly toasted bagels (4 halves)
In a small cup, use a spoon to mix sesame seeds, poppy seeds, dried chopped onion, and dried garlic flakes. In a small bowl, use a fork to mash one-half of the mixture into softened cream cheese, reserving the other half for topping. Spread 4 freshly toasted bagel halves with cream cheese blend. Betty's Non-alcoholic 4th of July Cherry Bombs
Betty demonstrates how to make Non-alcoholic Cherry Bombs. These are a great sweet treat for the 4th of July holiday.
Non-alcoholic Cherry Bombs
10-ounce jar stemmed maraschino cherries
½ cup to 1 cup white chocolate chips
2 tablespoons dark blue sugar
Drain cherries and pat dry. Set aside. Place white chocolate chips in an oven-safe bowl and heat in microwave oven until melted. Be sure to heat on low power and check and stir every 20 to 30 seconds. To assemble Cherry Bombs, hold maraschino cherry by its stem and swirl it in the melted white chocolate chips. Then roll it in the dark blue sugar, making a display of red, white, and blue. Place Cherry Bombs on a nice serving plate. Cover with plastic wrap and refrigerate until serving time. Betty demonstrates how to make a Hot Brown Salad. In the video, Betty uses the ingredients for a Hot Brown Sandwich to make a salad containing the same flavors. The salad is then topped with Romano-Parmesan Salad Dressing from the last video.
Summery Hot Brown Salad
croutons, made from deli croissants, cut into cubes, tossed in olive oil and toasted in a skillet on top of the stove until slightly brown and crusty
deli ¼-inch turkey slices, cut into 1-inch squares
leaf lettuce, cut or torn into salad-size pieces
small Roma tomatoes, cut into ¼-inch slices
crisp cooked bacon, cut into 1-inch squares
Romano-Parmesan Salad Dressing (previous video in Betty’s Kitchen)
Place the prepared ingredients in columns on an appropriately-sized platter in the order: croissant croutons, turkey squares, leaf lettuce, Roma tomato slices, crisp bacon squares, another column of croutons. To serve, use a salad fork and spoon to scoop up some of each ingredient and place it in a salad bowl, as much as desired. Pour or spoon Romano-Parmesan Salad Dressing over the top. Betty's spicy chili casserole
Betty demonstrates how to make Chili Casserole. This casserole has sirloin steak, dark red kidney beans, tomato soup, and chili seasonings.
Chili Casserole
1 pound sirloin steak, seasoned with salt, cooked, and chopped or shredded (I cook several pieces of steak in a slow cooker, seasoned with salt and wrapped loosely in aluminum foil, on HIGH for about 3 hours. Then I let the steak cool and chop or shred it for various recipes.)
2 tablespoons olive oil
1 large onion, chopped
½ teaspoon salt
½ teaspoon freshly ground black peppercorns
½ teaspoon ground cumin
1 tablespoon chili powder
10.5-ounce can tomato soup
14-ounce can kidney beans, drained (I use Dark Red Kidney Beans.)
In a deep skillet, heat olive oil. When oil is shimmering, add chopped onion. Saute onion over low to medium heat until clear. Add chopped or shredded steak, salt, pepper, cumin, chili powder, tomato soup, and drained kidney beans. Stir until combined. Pour mixture into an appropriately-sized casserole dish. Bake at 350 degrees (F) about 30 minutes. Serve with corn chips or cornbread. Shredded cheddar cheese makes a great topping for this casserole! Enjoy! --Betty :)
