2 Ways to use Leftovers \ Week 4 No Grocery Store
This is the final week of our no going to the grocery store. I was intending to go 6 weeks, but we are missing on having fresh fruit!! In this video I'm showing you how to repurpose leftovers and transform them into completely different meals. It's amazing what you can do with so little.
Other than having turkey sandwiches and potato cakes with noodles, we made 2 delicious soups!! Turkey rice soup and split pea soup using the leftover turkey carcass and meat is what was on the menu this week!!

Week 2 - No Grocery Store
This week, I only had to cook 3 times. We ate out one evening and attended our church's Thanksgiving dinner another. We had leftovers twice, so this covered our entire week!! I used one pound of sausage to get 2 meals out of it. Even though these meals are pretty carb heavy, we offset it with side salads (not shown in video).
Meal 1 - Homemade Pizza

Meal 3 - Pulled Pork - crockpot
Pizza Dough-
1 cup warm water
2 1/4 tsp yeast
1 TBL Honey
1 tsp salt
2 TBL oil

How to use Tahitian Melons
This is a recipe using Tahitian Melons. It is pretty difficult to find recipes using this type of melon on the internet. I treated it like a butternut squash. It does need a lot of seasoning, because it can be pretty bland. I used salt, pepper, nutmeg, and chili powder. No measurements, just by taste. These melons tend to get relatively large, so one melon will either make a large batch of soup, or you could dice it up and roast it in the oven too.

Homemade Balsamic Vinaigrette Salad Dressing
Making your own salad dressing is not only cheaper than purchasing store bought, the ingredients are minimal. This dressing is not only good on salad, but also baked potatoes and even green beans.
Recipe:
1 1/3 cup EVOO
1 Cup Balsamic Vinegar
4 Cloves of Garlic - minced
4 TBL Parsley
4 tsp Dried Basil
4 tsp Dried minced onion
2 tsp salt
This will last for a month on your counter, if it lasts that long!! Enjoy!!

The BEST way to use Leftover Mashed Potatoes
Our potato harvest was dismal this year. I harvested a lot of tiny potatoes and the best way to use them is to make mashed potatoes out of them. Mashed potatoes is something that you can use in multiple different ways to change not only the taste, but also the entire meal. I'm sharing with you three different ways that we like to use leftover mashed potatoes. Potato cakes, gnocchi, and potato candy are just three examples of how to use your leftover mashed potatoes.

Quick Mix- Biscuits
Make Homemade biscuits in no time!! This recipe uses the quick mix we made in a previous video plus water, and that is it!! You can bake it at 450 degrees just with those 2 items, or you can jazz it up however you like. Variations include:
Cheese and Herb
Buttermilk (just use 3/4 cup of buttermilk instead of water)
Orange ( 1 Tbl of zest plus 2 TBL juice as part of the 3/4 water)
These bake for 10-12 minutes. While still warm, top with melted butter and sprinkle a little salt on top. Delicious!!

Quick Mix - Muffins
The quick mix we previously made is the base for this recipe. This basic muffin recipe will let you add different ingredients and completely change the flavor of these each and every time. Oven temperature should be at 425 and bake time is going to be 15-20 minutes.
Base Muffin Recipe:
2 1/2 cups of Quick Mix
4 Tbl Sugar
1 egg - beaten
1 cup milk or water
There are many different variations you could use.
Raisin, Date or Nut - 1/2 cup of your choosing
Blueberry - 1 cup
Cheese - Add 1/2 - 3/4 cup grated cheddar cheese
Brown Sugar - Substitute this for white sugar
Bacon Bit - Crumble 4 strips of cooked bacon
Apple - up to 1 cup of grated apple - increase cook time to 20-25 mins
Orange - 1 Tbl zest of orange
Cranberry - 2/3 cup chopped dried cranberries
With this recipe being so versatile, it could be eaten with dinner or as a desert.

Quick Mix - Most Versatile Pantry Mix!!
This quick mix recipe is one to keep on your shelves. It uses up pantry staples and is a great way to make 30 different recipes!! Yes, 30 different recipes you can get out of this quick mix. You will need to find yourself a larger vessel to hold this mix in. It makes 13 cups in total. I was able to use my KitchenAid mixer for this, but please know that it was full. I used the lowest speed possible for this recipe.

Quick Mix:
8 1/2 cups all-purpose flour
3 TBL - baking powder
1 TBL - Salt
2 tsp - cream of tartar
1 tsp baking soda
1 1/2 cups instant nonfat dry milk
2 1/4 cups vegetable shortening
Mix this all together and store in an airtight container. Place in a cool, dry place. This will last approximately 12 weeks. In future videos, I will show you how to use this mix. In this video, I have provided you how to make pancakes.
Pancakes:
2 1/4 cups Quick Mix
1 TBL Sugar
1 egg
1 1/2 cups water

How to Make Applesauce & Apple-scrap Vinegar
I'm not going to lie, I absolutely hate making applesauce. Reason being, it takes way too long. But, the end result is worth the time and effort. We were blessed to receive our apples for free, so the only expense was the lids. It's important to wash your apples thoroughly, especially if you are going to be using the peels to make apple scrap vinegar.

Vinegar-
Apple peels plus the cores
1Tbl sugar to 1 quart of water-dissolve sugar in water
Pour water over the peels and place fermentation weight on top of the peels. Cover with cheese cloth or coffee filter. Secure with a rubber band. Once fermentation is complete, strain and store. Great on salads and cooking.
Applesauce-
12 lbs apples
4TBL of lemon juice
Sugar( up to 3 cups). If you use a variety, the amount of sugar should be minimal.
Spices- up to 4tsp (cinnamon and allspice combination)
Waterbath can quarts and pints for 20 mins.

I will show you how we use our canned spaghetti sauce plus other veggies from our garden to make a wonderful pasta dish. I did let the sauce cook for about 45 minutes. Oven-Roasted Marinara
Join me as a water-bath can oven-roasted marinara. This recipe is from the Ball canning book and is a great way to use up a larger quantity of tomatoes. We ended up with 4 quarts plus a little in a container for that nights dinner. The recipe uses 20 lbs of tomatoes. So, if you are crazy like we are and grow 87 tomato plants, I'm sure you could easily come up with 20 lbs!! This recipe is easy and doesn't require many ingredients. The instructions are detailed in the video along with the cook times. I hope you love this use of tomatoes as much as we do!!
