Preheat the oven to 350F. Butter an 8x8 pan and line with two pieces of parchment paper. In a medium bowl, mix flour, baking powder, salt, and cocoa. Set aside. In another medium bowl, add chocolate chips and butter and microwave in 20 second intervals, stirring between each, until melted. Set aside to cool at room temperature.

For the Cream Cheese Yogurt Dip Sauce: 1 cup plain yogurt 3/4 cup cream cheese 1/2 cup sour cream 1/4 cup crumbled feta cheese Salt, pepper 1 tbsp fresh basil

For the Roasted Vegetables: 1 pint (10 oz) cherry tomatoes
4-6 mini sweet peppers 3-4 cloves garlic 1/4 cup pitted olives Fresh basil and thyme Salt, pepper 1/3 cup olive oil
Preparing the Cream Cheese Yogurt Dip Sauce: In a medium bowl, add yogurt, sour cream, cream cheese, crumbled feta cheese, minced garlic, chopped fresh basil, salt, and pepper. Mix them all together until combined well. Keep in the refrigerator until ready to use.
Preparing the Roasted Vegetables: Preheat the oven to 425F.
In a medium baking dish or tray, add tomatoes, peppers, garlic cloves, olive oils, fresh herbs, olive oil, salt, and pepper. Toss/mix to combine. Roast them for 20 min until the vegetables are well roasted and softened.
Assembly:
Place the sauce on a serving platter and use the back of a spoon to create waves on top. Top with roasted vegetables, fresh herbs, and red pepper flakes.
Serve with crispy bread.

Ingredients
For the Streusel:
1/3 cup/45g all-purpose flour
1/3 cup/65g granulated sugar
1 tsp lemon zest 3 tbsp cold butter
For the Batter:
2 cups/260g all-purpose flour 2 tsp baking powder
Pinch of salt
½ cup/113g melted butter
1 cup/200g granulated sugar ½ cup/125g whole plain yogurt
2 eggs
Zest of 1 lemon
1 tsp lemon juice
1 tsp vanilla extract
¼ tsp lemon extract (optional) 1/4 cup/60g buttermilk
1 cup fresh blueberries
Instructions:
For the streusel: In a medium bowl, add flour, sugar, and lemon zest and stir to combine. Add cold butter and using a fork, press and cut the butter into the flour mixture until it is crumbly and you have chickpea-size pieces. Set aside.
For the batter: In a small bowl, mix flour, baking powder, and salt. In a medium bowl or base of a stand mixer, add butter and sugar and whisk together. Whisk in the yogurt and then add eggs one by one while continuing to mix until combined well. Add lemon zest, lemon juice, vanilla extract, and lemon extract and mix well. Add in the flour mixture, reserving ¼ cup. Using a wooden spoon, mix the 1/4 batter until fully incorporated. Add buttermilk, remaining flour, and blueberries and fold in until everything is combined well.
Preheat the oven to 370F. Place 12 liners into a muffin mold. Using 2 tbsp ice cream scoop, add muffin batter into each liner. Divide the streusel evenly overt the top of each muffin. Bake for 23-27 minutes until lightly golden brown. Remove from the oven and let cool for 1 hour. Serve with or without glaze and with tea or coffee.
Note:*You can use blueberry glaze as a topping if you prefer a sweeter muffin!

Instructions:
In a medium bowl, mix all sauce ingredients and

Let it rest in the refrigerator for 45-60 min. Preheat the grill or a skillet to medium heat. Divide the meat mixture into 8 equal parts. Take a piece and press it using your hands into a burger patty about 3/4 inch thick. Grill the burgers until nicely browned, 3-4 minutes per side.
Preparing the Fried Jalapeno: In a medium bowl, add flour, garlic powder, onion powder, chili powder, salt, and baking powder. Using a whisk, mix the dry ingredients well and then add the sparkling water. Mix to combine well. Add the jalapeno pepper rings into the batter and coat them in the mixture. In a medium pan, heat neutral oil to 350F, and using a fork carefully place the ring in the hot oil and cook for 4-5 min until the rings are golden brown and crispy. Remove from the oil onto a paper towel-lined plate and set aside.

500g cream cheese
300g sour cream
200g mascarpone
400g heavy whipping cream 3 tbsp cornstarch
1 tbsp flour
1 1/2 cups granulated sugar (You can decrease the sugar by 1/2 cup for a less sweet version!)

1 tbsp vanilla
Instructions:
Preheat the oven to 420F.
Lightly grease a 9-inch springform pan, and layer it with parchment paper. In a small bowl, whisk the corn starch and flour. Set aside.
In a large mixing bowl, add room temperature cream cheese, mascarpone, and sour cream. Mix until the mixture is smooth and creamy. Add the heavy whipping cream and vanilla and mix well. Then, sift in the flour mixture and gently fold it into the batter until combined as shown in the IG Reel.
Using an electric or hand mixer, beat the sugar and eggs until fluffy, for about 4 min. Add the egg mixture into the cheesecake mixture and stir well. Pour the cheesecake batter into the prepared pan.
Bake for 27-30 min. After that, broil the cheesecake in the oven until the top has burned to the color in the Reel, only for 20-30 sec. (Note: If the cheesecake still seems too jiggly, you can bake it for another 6-7 minutes at 420F but keep in mind that it should be more creamy and jiggly in consistency than regular cheesecake. For the best results, check your cheesecake at 1-2 minute intervals after the 27th minute.)
Remove from the oven and cool. Chill in the refrigerator for at least 6-7 hours, or better overnight.
You can serve it plain, or with chocolate ganache or caramel sauce.

1 slice of lemon

In a saucepan, add the sugar, water, salt, and lemon slice. Bring to a boil over medium-high heat. Reduce the heat to medium-low and let simmer for 12-15 min. Remove the syrup from the heat and let cool at room temp.

Then, lay a sheet of phyllo sheet on the bottom of the baking sheet and brush with butter. Repeat this process with 16 more sheets. Sprinkle 3/4 cup of the shelled raw pistachio evenly over the dough. Then continue to layer 4 more sheets and sprinkle with another 3/4 cup of pistachio. Top the pistachio layer with one phyllo sheet and brush with butter. Repeat this process with the remaining phyllo sheets and butter to complete 40 layers as in the IG reel. Brush the top of your baklava with butter and cut into squares (or diamonds) of equal size using a sharp knife. Bake for 40-45 min until golden brown.
Remove from the oven and pour room temp syrup over the hot baklava. Set aside for the baklava to absorb the syrup and let cool completely. Serve with tea or coffee.
