Meatballs
Ingredients:
1 lb. Ground Beef
1/4 cup Rice, raw
1/2 cup Onion, chopped
3 tbsp Parsley, chopped
2 Garlic Cloves, chopped
1 tbsp Oregano
2 tbsp Parmesan Cheese, grated
1/2 tsp Salt
1/4 tsp Pepper
1 Egg
1-2 tbsp BBQ Sauce
2-3 tbsp Italian Style Bread Crumbs
Cook Rice, set aside and cool.
Preheat Oven 400°F.
Line Baking Sheet with Parchment Paper.
Combine Beef, Rice, Onion, Parsley, Oregano, Parmesan, Salt, Pepper, Garlic, Egg, BBQ Sauce & Bread Crumbs, mix.
Form equal sized Meat Balls (16), place on Baking Sheet.
Bake 20-22 Minutes.

Remove Juice Container and stir.
Feel free to add some cold Water if you like to thin out the Carrot Apple Juice.

Black Bean Tamales
Ingredients:
3 cups Maseca Tamal
3-3/4 cups Broth (Beef or Veg.), divided
1/2 cup Lard, melted
2 tbsp Butter, melted
1 tsp Baking Powder
2 tsp Salt
1 tbsp Hoja Santa (or Oregano)
1 tsp Cumin
1 cup Black Beans
25 Corn Husk
Soak Black Beans in boiling Water for 1 hour.
Place Beans and enough Water to cover in Instant Pot.
Pressure Cook Beans 30 min.
Remove and cool.
Soak Corn Husk in hot Water.
(while Beans are cooking)
Combine Maseca, Butter, Lard, Hoja Santa, Baking Powder, Salt & Cumin.
Integrate Broth.
Mix in Black Beans.
Rest Mixture 10 Minutes.
Pull of 28-30 Ribbons from wet Husks.
Tie two at a time together, set aside.
Spread out lg. spoon full of Mixture in middle of Husk.
First, fold in each side and then fold up bottom.
Place Ribbon around to secure.
Set Instant Pot to "Pressure Cook "
Use Trivet and add 1-1/4 cups Broth.
Cover Trivet with remaining Husks.
Place Tamales vertical in Pot, secure Lid.
Cook 55 Minutes, open after natural release.
Rest Bean Tamales for a few Minutes & serve.

Vegetable Quiche
Ingredients:
1 - 9" Pie Crust, bought
1 Onion
90 gr. Broccoli
3 Green Onions, chopped
1 Roma Tomato
1/2 cup Cheddar Cheese, shredded
6 med (or 5 lg.) Eggs
1/2 tsp Salt
1/4 tsp Nutmeg
Pinch Pepper
1/3 cup Milk
1/3 cup Half & Half
60 gr. Spinach, frozen/thawed
1-9" Pie Dish
Preheat Oven 450°F.
Form and crimp Pie Crust in Dish.
Prick Crust with Fork several times.
Prebake for 10-12 Minute, set aside and cool.
Slice & caramelize Onion, set aside.
Cut (small) and steam Broccoli.
Remove insides from Tomato and small dice.
Set Oven to 375° F.
Combine Eggs, Salt, Nutmeg, Pepper, Milk and Half & Half, whisk well.
Add Spinach, Tomato, Green Onions, Broccoli, caramelized Onion & Cheese, incorporate well.
Fill Crust with Mixture.
Bake until set, approx. 50 Minutes.
(Tip: cover with Foil if Crust starts to get darker)
Cool on Wire Rack.

Use Ziploc Bag and combine Chicken, Yogurt, Chili Powder, Pepper, Turmeric, Cumin, Salt, Lemon Juice, Lemon Zest & Ginger (1"grated), refrigerate & marinade 2-3 hours.
Set Instant Pot to "Sauté" heat Oil.
Sauté Onions add Garlic & Ginger, sauté 1 Minute.
Stir in Tomato Sauce & Diced Tomatoes.
Incorporate Chicken Mixture.
Set Instant Pot to "Pressure Cook" secure Lid.
Cook 8 Minutes open after quick release.
Set Instant Pot to "low Sauté"
Add Coconut Milk, simmer 1-2 Minutes to thicken.

Cooking Spray
Muffin Pan
To make our own Muffin Cups.
Cut out 12 - 6"x6" Parchment Paper Sheets.
Fold each in a triangle from each side to find the middle.
Place them in the Muffin Pan, try to center it and form a cup.
Lightly spray each with the Cooking Spray.
Preheat Oven 375° F
To make the Streusel.
Combine Flour, Brown Sugar, Sugar, Cinnamon & Salt.
Add Butter and mix until it resembles wet Sand.
Refrigerate until ready to use.
To make Muffin Batter.
Combine Flour, Salt, Baking Soda, Baking Powder & Cinnamon, whisk well, set aside.
Cream together Butter, Sugar & Brown Sugar.
Add one Egg at a time and Vanilla.
Mix in Sour Cream.
Incorporate Flour Mixture in batches.
Divide half the Batter equally in Paper Cups.
Top each equally with half the Streusel Mixture.
Place rest of Batter equally on top.
Top with rest of Streusel Mixture, pressing down lightly.
Bake 22-24 Minutes or until tester comes out clean.
Rest 3 Minutes in Pan.

Tomato Soup
1 can (15 oz) Tomato Sauce
1 can (14 oz) finely chopped Tomatoes
1/2 tsp Salt
1/4 tsp Pepper
1 tbsp Worcestershire Sauce
2 tbsp Brown Sugar
Rolls:
1 head Green Cabbage
1/3 cup Rice, raw
1 lb. Ground Beef
1/4 tsp Pepper
1/2 tsp Salt
1 tsp Crushed Red Peppers
2 Garlic Cloves, chopped
2,5 tbsp Parsley, chopped (plus extra to sprinkle)
1/2 med Onion, chopped
4 tbsp prepared Sauce
1 Egg, beaten
8 x 11,5 x 2,5" Dish
Aluminum Foil
Cook Rice, cool & set aside.
To make Sauce.
Heat Oil on med/high Temperature.
Sauté Onions and Garlic.
Add Tomato Soup, Tomato Sauce, finely chopped Tomatoes, Salt, Pepper, Worcestershire Sauce & Brown Sugar.
Combine well and simmer 10-15 Minutes, stirring occasionally.
Set aside.
Cook Cabbage in boiling Water (15-20 Minutes) or until Leaves are soft.
Rolls:
Combine Beef, Pepper, Salt, crushed Red Peppers, Garlic, Parsley, Onions, Rice, prepared Sauce & Egg.
Mix well and divide in 8 equal Portions.
Peel off 8 Cabbage Leaves, cut out Rib and dab dry.
(Tip: if Leaves are small layer 2 small ones)
Preheat Oven 350° F
Place one Beef Mixture Portion in the center of the leaf, fold in the sides and roll
the Cabbage Leaf up.
Put a thin layer of prepared Tomato Sauce in Dish.
Place Cabbage Rolls seam side down.
Top with Tomato Sauce.
Cover with Aluminum Foil.
Bake 75-85 Minutes.
Let stand for 5-10 Minutes.
Sprinkle with Parsley.

Ingredients:
2 cups Corn Meal Mix
3 tbsp Lard
1 Jalapeño, finely chopped
3/4 cup Corn Kernels

1-1/2 cups Whole Milk
1 Egg, beaten
Preheat Oven 425°F
Place Lard in 2 quart Dish or Cast Iron Pan and melt in Oven.
Coat Dish with Lard.
Set remaining Lard aside.
Keep Dish in Oven until ready to use.
Combine Corn Meal Mix, Turmeric, Sugar & Salt, whisk well.
Add Milk and Egg.
Incorporate remaining Lard.
Mix in Jalapeño & Corn Kernels.
Pour Mixture in hot Dish.
Bake 20-22 Minutes.
Until golden and tester comes out clean.

2 Negro Chili Peppers
6 Guajillo Chili Peppers
1 white Onion, halved
3 Garlic Cloves
2 Whole Cloves
2 Chipotle
Lrg. Pinch Salt
1-1/4 cups Water
Splash of Vinegar
4 lb. Pork Shoulder Pieces
2 tsp Cumin
2 tsp Oregano
1-1/2 tsp Salt
1/2 tsp Pepper
1 cup Broth
Remove Seeds from dry Chili Peppers.
In dry Skillet on high heat cook dry Peppers until softened, remove and cut in 1/3.
In same Skillet, lightly char Onion, Garlic & Whole Cloves, remove.
In Blender combine Chili Peppers, Onion, Garlic, Cloves, Chipotle, Salt, Water & Vinegar.
Blend until smooth, set aside.
Combine Cumin, Oregano, Pepper & Salt, whisk well.
Coat Pork Pieces with Seasoning Mixture.
Set Instant Pot to "Sauté"
Heat Oil, sear Meat on all Sides (in Batches) remove, set aside.
Deglaze with Broth, scrape off all brown bits.
Add 1 cup of Chili Sauce, stir well.
Return Pork & Meat Juices to Pot.
Set Instant Pot to "Pressure Cook "
Secure Lid.
Cook 55 Minutes.
Open after (15-20 Minutes) Natural Release.
Remove Pork, place on Baking Sheet and shred Meat.
(Tip: give a few Spoon full of cooking Liquid over the Pork, keep warm in Oven (200°) until ready to use)

1 Onion, sliced
1 tbsp Garlic, chopped
1 tbsp Ginger, chopped
2 Green Onions, chopped
Salt & Pepper
2-3 tbsp Oil
Combine all Peanut Sauce Ingredients, whisk well, set aside.
On high Temp heat 2 tbsp Oil.
Add Sweet Potato & Carrot.
Season with Salt & Pepper.
Sauté until fork tender, remove.
Add Broccoli & Squash, season with Pepper.
Cook until Squash takes on color, remove.
Add Bell Pepper & Onion, season with Pepper.

Chocolate Walnut Banana Muffins
Ingredients:
1-3/4 cups Flour
1/4 cup Cocoa Powder
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
3 Bananas, ripe
2/3 cup Sugar
1/2 cup Butter, melted
1 Egg
1 tsp Vanilla
2 tbsp Whole Milk
1 cup Walnuts, chopped
Cooking Spray
12 - 6" round Parchment Papers or 12 Muffin Liners
1/2 cup Walnuts, chopped, for Topping
Fold each Parchment Paper a few times in half while rotating to get the middle.
Center Papers over Muffin Pan Wells & press down to form Cups.
Spray each lightly with Cooking Spray, set aside.
Combine Flour, Cocoa, Baking Powder, Baking Soda & Salt, whisk well.
Cream together Sugar & Butter.
Add Egg, Vanilla & Milk.
Mix in Bananas.
Incorporate Flour Mixture in batches.
Fold in Walnuts.
Equally fill each Cup with Batter.
Top each equally with remaining Walnuts.
Bake 5 Minutes.
Lower heat to 350°F.
Continue baking 15-17 Minutes or until tester comes out clean.
Rest 5 Minutes in Pan.
Cool completely on Wire Rack.

Baked Chicken Drumsticks
Ingredients:
14 Chicken Drumsticks
4 tsp Garlic, granulated
4 tsp Oregano, dried
1-1/2 tsp Chili Powder
4 tsp Paprika
4 tsp Onion, dried/minced
1-1/2 tsp Black Pepper
2-1/2 tsp Pink Salt
2-1/2 tsp Oil
Line Baking Sheet with Foil.
Preheat Oven 425°F
Combine Garlic, Oregano, Chili Powder, Paprika, Onion, Pepper & Salt, whisk well.
Integrate Oil to make a Paste.
Pat all Chicken Legs dry with Paper Towel.
Rub each Drumstick with Seasoning Paste.
Arrange in single layer on Baking Sheet.
Bake 20 Minutes, remove and flip Drumsticks.
Continue baking 20-25 Minutes.
(Internal temp 165°F)

(two ways)
Pointy Edge Liners:
12" x 36" Parchment Paper
Cut out 12 - 6"x6" squares.
Fold each in a triangle from both sides to get the middle.
Center each paper over a Pan Well, press down and form a Liner.
Straight Edge Liners:
12" x 36" Parchment Paper
Cut out 12 - 6" circles.
(Tip: easier to find a bowl with that measurement)
