Before the planned demic I was getting all young people from other countries doing internships with School of Mines in Golden, CO, Martin and Martin Lakewood CO and most of all NREL, National Renewable Energy Laboratories in Golden CO also. These young people were gracious, kind, curious and wanted to make friends as they had never been to the USA before. So they all started cooking and eating and going places together. Some even enjoyed hanging out and chatting with me.
We started having a Friday afternoon club and I would have the people from my other house over as well. We would do pot luck then play games. They all really enjoyed getting to know others from other areas of the world, just like myself. It was great!
The we had the Covid thing happen and our country closed down. To this day I believe we are still one of the hardest country's to get into unless you walk across the southern boarder. If you want to talk about that? Lets chat about it here. Leave a comment

My Birthday Month Celebrations With Some Travel And Friends
So many of my friends tell me that they take the whole month for their birthday. A new friend Allen asked me why should it be ok for someone to take the month. He thought, do you party like a rock star.

I feel like if you want to spoil yourself for a month, doing healthful things and or pamper yourself. Rather than why, I'm going to say why NOT? This is what I felt like I did.
Traveled on a shoestring to MX. Stayed at an Airbnb in Cancun for several days then had two friends join me. We toured, walked beachside, walked around the Entica neighborhood where are airbnb was. We swam in cenotes and walked around Mayan ruins.
We had some ok food and some amazing food. I don't really eat out much at all but this was my birthday month.

When I was at the grocery store I had Sauerkraut on my list. I'm trying to get my gut healthier. Sauerkraut is a delicious, probiotic-rich dish that is perfect for any time of year. I saw the price. OMG! Such a small amount for $5.
I remember a friend who made Kraut and Kimchi, they told me it wasn't hard at all. Just lots of chopping. Of course I think I can do that!
So I did get a bit cocky, when I saw Sauerkraut has only 2 ingredients I thought it had to be super easy to make at home. Well I had to throw the first large batch away. It wasn't that it was hard. I just followed a recipe that wasn't quite right. They didn't tell me to brine the water if I needed to add extra. They also used the extra outer leaves to weigh the fermenting Kraut down.
Well those outer leaves started rotting in the salt water and they were not keeping all the cabbage under the brine. You MUST keep all the ingredients under that water.
The next batch you will see I used a baggy of water that would lay over the whole top of the kraut and brine. This batch is coming along nicely. I'm excited!
This is what I did for the good batch,
1 head of cabbage - take all the bruised leaves off. Cut the stalk out
Chop it thick or thin. You get to choose
1.5 -2 tsp of sea salt per pound of cabbage
Don't used iodized salt to ferment. It just does't work
So me I added aromatics to mine, 1 large clove of garlic 1 inch of ginger
Mince them. I also added a carrot. I love the color and just love carrots.
When all that is in the same bowl, sprinkle the top with the salt and massage it in to everything. This is that magic that will cause the fermentation.
You will see the waters coming out. The fresher your cabbage is, the more liquid will start forming in your bowl.
With the second batch. I also mashed it into the jar I was using to ferment in. This helped me work up enough liquid that I didn't have to add extra.
If you do have to add extra, make sure you add salt to it. 4 tsp per cup.

Calzone #shorts
Great foods can start with left overs from other meals. A little pizza dough, with cheeses, sauce and what ever veggies you have and would like to put into the dough. This is a calzone.
I used mushrooms, onion, burrata filling, kitchen of love sauce and a hard cheese I had left from another meal. Roll that all into the rolled out dough and flash fry, then bake. You need the sides to bake up and the insides to heat, melt and blend together.

If You Have Fresh Peaches, You NEED To Make This Recipe!
You can use apples for this cake as well, but use cinnamon instead of nutmeg
Oven 375 bake for 1 1/2 hours
3 cups flour
3 tsp. baking powder
2 tsp nutmeg
Mix together and set aside
2 cups sugar
1 cups your favorite oil or melted butter
4 eggs
juice of one orange/peach juices
2 1/2 tsp vanilla
8 peaches/apples sliced
Layer, peaches batter, peaches batter into a buttered bundt pan

How to Trim Your Basil Plant, Make Pesto, and Store It
Basil is so easy to grow and most grocery stores have live plants in their produce sections. So I buy one first of the season. Place it on my kitchen window sill, using some while giving it care. After fear of frost transper it outside.
Last year it was a small scrub. This year it did well but not like last year. I started trimming and using the basil right away and still do. Then when the plant gets out of hand. Trim it back and make batches of Pesto.
You can store it in the freezer till you start making it again the next year.
