Baking powder •3 eggs •1/2 cup butter, melted, or at room temperature •3/4 cup milk •1 tsp. Lemon or citrus juice •1 tsp. Pure vanilla extract •1-1 1/2 cups of optional mix-ins; berries, nuts, seeds, oats, nuts, cinnamon, chopped apples, grated carrots, raisins, chips, cocoa, just about anything you like. Instructions: 1. Preheat oven to 350 F and butter, oil, or grease muffin pan. 2. In a large bowl combine all ingredients. 3. Mix well. Pour batter into prepared muffin pan and bake for 22 - 25 minutes until the muffins are golden. 4. Cool in the muffin pan for 10 minutes, then transfer onto a rack to cool completely. Turn each muffin in a complete circle ⭕️ inside the pan, in order to remove them EASILY from the pan. 5. Refrigerate with a paper towel on top to absorb moisture. Once completely chilled remove paper towel and freeze if desired.
