Smoked Turkey
Brine your bird! For a moist turkey (or chicken), you should try this brine. Use equal parts sugar & salt and cover the bird with water. I’ve been using this one for several years, and it has a great twist - molasses. See recipe below. Enjoy!

Turkey Brine
1 cup salt
½ c dark brown sugar
1 cup molasses
Thyme, sage, and ice
Cover with water
Stuff the bird with onions and apples, cut to fit the cavity. Put a few sprigs of thyme & rosemary in there too. This year, I used evoo for my binder, SPG & rosemary for the rub.
Smoke at 275. Ideal finish temperatures for the breast, thigh and leg are 157°F (69°C), 169°F (76°C) and 185°F (85°C), respectively. (Thermoworks)

Chicken pot pie filling
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1 tsp SPG
1 ¾ cup chicken broth
½ cup milk or cream
2 ½ cups diced chicken
2 cups mixed veggies (peas & carrots)
Melt butter in a skillet over medium heat. Add onions and cook until tender. Stir in flour, SPG, cream, and broth until creamy. Add the veggies and chicken.
Flaky pie dough
2 ½ cups all purpose flour
2 sticks cold butter, sliced
½ tsp salt
½ cup ice water
Add the flour and salt toCuisinart.Cut in cubes of the butter and slowly add the ice water until mixed. Wrap in plastic and refrigerate for 4+ hours. Roll out the dough on a floured surface and cut the pot pie base and toppers.

Burnt Ends Benedict
Here’s a new family favorite with leftover competition burnt ends. We took a traditional eggs benedict and upgraded it with a BBQ twist. Start with competition Snake River Farms Wagyu burnt ends and place them on a sour dough roll, lightly toasted. We added a drizzle of Blues Hog original, eggs over easy, and drenched it with a traditional hollandaise made with Kerry Gold butter. Enjoy!!!

• 1 stick Kerry Gold Butter
• SPG to taste
• 1 TB fresh squeezed lemon juice
• 4 egg yolks

One of our favorite recipes with comp leftovers is BBQ chicken pizza. See below for directions.
• Pizza crust
• Blues Hog BBQ Sauce (50/50 Original & TN Red)
• Red Onion – sliced
• Cheddar & Mozzarella cheese (50/50)
• Smoked chicken, diced
We used a Boboli original pizza crust and preheated a pizza stone. Bake at 425 for 9 to 11 m until crust golden brown. Rest, slice & serve!

Mushy Peas & Pie
I’ve wanted to try this personal pie maker for a while. My inspiration came from Harry’s Café de Wheels in Sydney, Australia, where I had my last mushy peas & pie. I chose a chicken satay pie filling, made homemade pie crust, and topped these pies with mushy peas and mushroom gravy. Go smash a pie!!!

Christmas Beef Tenderloin
We enjoyed a beautiful beef tenderloin from the Fareway Meat Market in Overland Park KS. I seasoned the tenderloin with SPG, rosemary, and smoked at 275 F with pecan wood for about 90 min. I braised with my brisket wrap for a tasty au-jus and finished it at a perfect medium rare. Served with a compound butter, garlic mashed potatoes, and roasted veggies for a wonderful Christmas meal.

It’s cold this morning in Olathe with a sleet and snow mix. Sounds like a great day for a crock pot meal. We are celebrating with a classic Hoppin’ John served over rice. Christmas Brisket
We enjoyed a brisket for Christmas dinner again this year. I injected with Big Poppas Cattleprod Beef, SPG, and Slaps BBQ rub. I smoked at 275 with Royal Oak lump and pecan. I wrapped with Slaps mop recipe and let the flat & point rest for a few hours before serving for dinner. Merry Christmas!!!

Kosmo's Smoked Penne & Cheese
I ran a full comp practice cook Saturday and catered dinner with friends. Besides the core four, we’re smoking a batch of Kosmo’s smoked mac & cheese (penne for mac) https://youtu.be/2sNM3DHisAo and Burnt Finger’s smoked baked beans with brisket. This potluck was out of the park!!!

270 Smoker Refurb
I got my first 270 Smoker in 2014 and my mighty mini has been fantastic! Unfortunately, I did not take care of her and dry it out or clean the ash after each cook as recommended and it rusted out before its time. Fortunately I was able to get a friend to weld a new firebox and inside shelf to repair the damage. Add a new powder coat finish and this baby is ready to hit it out of the park!!!
