Slow Cooker Fiesta Chicken and Rice Casserole
Ingredients:
1 1/2 lbs. boneless skinless chicken breasts
1/4 tsp. pepper
1/4 garlic powder
1/2 tsp. chili powder
10.5 oz. can cream of chicken soup don't add water
1/2 cup diced white onion
11 oz. can Mexicorn, drained (this is corn with peppers in it)
1 seeded jalapeno minced
These ingredients are added at the end:
6 oz. box Farmhouse Spanish rice (follow stove-top instructions)
14 oz. can diced tomatoes needed to make the rice
2 Tbsp. salted butter needed to make the rice
1 1/2 cups water needed to make the rice
3 cups shredded sharp cheese divided
1/2 cup sour cream

Slow Cooker Chicken Enchilada Casserole
RECIPE:
INGREDIENTS:
1.5 lbs. boneless skinless raw chicken breasts
1 28 ounce can Red Enchilada Sauce (I use El Pato Brand)
Add these ingredients at the end:
10 corn tortillas (I used an entire 11.7 ounce bag)
3 cups grated cheddar cheese (divided)
1 3.8 ounce can black olives (divided)
SLOW COOKER SIZE:
6-quart
INSTRUCTIONS:
Put the chicken breasts and the enchilada sauce in your slow cooker.
Cook on HIGH for 4 hours or LOW for 8 hours.
Shred the chicken with 2 forks right in the slow cooker.
Cut the tortillas in to strips, add to chicken and sauce.
Stir.
Add 1 cup of cheese and half the olives into the sauce and chicken mixture.
Stir again.
Flatten the mixture slightly.
Add the rest of the cheese and the olives on top.
Cook on low for about 40 - 60 minutes longer.
Top with sour cream (optional)

SLOW COOKER OLIVE GARDEN CHICKEN PASTA
RECIPE:
INGREDIENTS:
1.5 lbs. boneless skinless chicken breast (1.5-2 pounds works fine)
16 oz. Olive Garden Italian dressing (or any Italian dressing you like)
1/4 cup grated parmesan cheese
8 oz. cream cheese
¼ tsp. black pepper
Add these items after cooking time is up:
16 oz. penne pasta (cooked according to package directions and drain well)
¼ cup parmesan cheese
SLOW COOKER SIZE:
6-quart or larger
INSTRUCTIONS:
Add the chicken breasts to the slow cooker.
Pour over the Olive Garden Italian dressing and sprinkle over the parmesan cheese.
Place the cream cheese on top.
Place the lid on the slow cooker. Cook on HIGH for 4 hours or LOW for 5-6 hours.
When the cooking time is almost done, start cooking the pasta on the stovetop as directed on the package.
Shred the chicken with 2 forks. Drain the pasta and add to the chicken and sauce. Stir. Sprinkle over the remaining parmesan cheese.
Serve and enjoy!
