Tropical Carrot Cake

A couple of notes: I have to use 4 1/2 teaspoons of vanilla in the video because my son took my teaspoon to use at work and I didn't know it. So the recipe calls for 2 teaspoons of vanilla, not four.
Also, I don't keep buttermilk on hand. I make buttermilk by adding a splash of white vinegar to regular milk and letting it sit for a few minutes. No need to go to the store just for buttermilk.

I got this idea when I had vanilla ice cream topped with a wine syrup at a steakhouse. It was wonderful! So when I had some leftover pink champagne, I decided to make a syrup and try it on ice cream.
