Today I am sharing with you a great way you can engage your little ones outside and have full confidence that they are learning. Gardening is a simple way to give them that sensory experience, teach them responsibility and build their self esteem. Any preschooler can benefit from Gardening.
This is also essential for special needs. My daughter has Down Syndrome, everyday I try to slow down and take in the simple things in life, guide her through simple tasks that she struggles to build. Working through the difficulties and making great strides to overcoming her challenges. Gardening is a simple thing we do together as a family (siblings included). We work on skills that she needs and has been tasked by her Occupational Therapist. With Down Syndrome, as with Austism, Sensory Processing disorder, ADHD or any other special needs situation, there are challenges.

I am going to expose the one secret, the one parenting tip that has transformed my homeschooling, and no kidding, my life. The secret parenting tip, is to stop comparing yourself and your kids to other people. I'm going to go deep. Not just saying "try relaxation techniques" or "quit Social Media" because we all know those don't work. They don't work! It's a deep rooted jealously issue. It's also FOMO. Fear of Missing Out, which is rooted in jealousy.
I will also discuss how this affects special needs parents. As well as Nationally Normed Tests, Benchmarks and State Standards. And how these test can have both a positive and negative impact on children and you as the parent.

Are you sick of those health recipes that your kids look at once and then dump? Is your kids a Picky Eater? Do they have Sensory Issues or Sensory Processing Disorder. Well here are 3 (plus one bonus) Meal preps ideas for Picky Eaters!
Here are the Hidden Veggie Receipes
Dish One: Pasta Sauce Instructions
Start with oil, garlic, onion and peppers. Fry those for 10 mins until onion are lightly browning on Medium Low.
Add in a large quantity of Veggie, watch for color, keep it reddish, yellow, orange or white. Stir in some Tomato Sauce or pasta sauce, whatever you or your picky eater likes. Make sure you add enough so the pasta sauce is wet and has enough liquid to cook the veggies (2-3 cans). Add 2 Tablespoons of sugar, 1 tablespoon of Oregano and Parsly.
Next Blend all ingredients.
Poor back into the saucepan, mix in the cooked Pasta and serve.
Dish Two: Pizza
Here the link to Bread Beckers if you are interested in milling and baking bread. Otherwise you can make your own pizza dough or buy it from the store.

Use the sauce from the Pasta Recipe above. Have kids decorate and cook in the oven at 400 for 10 -15 mins. Keep an eye on it. I have learned that every oven does cook differently. So use your Mom instincts.
Dish Three: Veggie Soup for a Sick Day
Pot of water, lot of veggie, don't forget Onions and Garlic for taste as well as Salt.
Bring to a boil, then simmer. Simmer for a few hours.
Add noodles accordingly.
Dish Four: Bean Taco Filling
Soak Bag of Beans over night. In the morning transfere to a crockpot. If you are adding Ground beef, add it now. Add in chopped veggies. As many as you want. A tablespoon or two of water to give it some moisture. Let it cook on high for 2 - 3 hours.
After 2 - 3 hours, add Taco seasoning. Stir. If you have beef, let it cook for a few more hour. Make sure it is moist, don't be afraid to add tomato sauce or water.
If it's beans, take a 1/2 cup of beans out and blend the rest of the mixture till smooth. Add both the pureed beans and mixture to the Crock pot and keep it warm.
When the beef mixture is done, do the same.
Add it to a wrap, chips or taco salad.

On of the hardest Parts of Parenting Down Syndrome is figuring out how to give them complete nutrition, getting their muscles to physically eat and meeting the needs of their taste buds. So what does my kid eat in a day?
Naomi is three years old, not all of her oral motor skills are developmental up to age level, so I continue to puree. I have to mix in her favorite foods. That includes sweet potatoes and apple sauce. I also feed her fruit and crunchy rice cakes. The hard part is keeping everything health.
