Green Tea Harvest And Processing Sorta
I noticed my tea bushes were sending out fresh new shoots and it had been pretty cloudy. That means it's going to be very flavorful. I did one small batch flawlessly and the next three not so well. I didn't get a full 20 seconds of steam on the leaves evenly. I won't have that problem next time because I won't be so busy with everything else. I have a fair number of small tea shrubs that I'll plant out in a hedgerow sometime next year.
Now about tea. What I created in the first batch is sensha. That tea is best cold brewed at around 85 degrees F. Don't leave it in too long or it will change the flavor profile. That's how I make my iced tea in the summer. Try it.

Time To Rise And Shine
This was a video I did just before the court cases were heading to SCOTUS regarding voter fraud. There are still a lot of audits being performed and the level of fraud is being exposed. Do not trust the media to tell you the truth by the way. Pay attention to who lied and who was honest. Hint that's when you know who to never trust or support again. I watched the hearings and yup! SCOTUS didn't impress me one bit. Three of them wanted to hear the cases Roberts didn't and the two that were brow beaten by the leftist media were silent. Nixtamalize Corn Into Hominy
In this video I explain how to nixtamalize corn. The process involves using a base and in this case it is wood ashes. The process removes the husks and increases the Niacin availability. When the settlers moved to the North American Continent they were introduced to corn. They took the grain back to Europe but forgot to take the process with them. It cost a few lives too.

Canning Butter and Waterglassing Eggs
Butter is is quite simple to can, but it is a bit time consuming so when I do it I do a lot. Waterglassing eggs is a simple process, but you can't use the eggs you buy in the store. In order to be sold in the US you have to wash your eggs first. Washed eggs are on their way out the moment you wash them in tap water or abrade their surface. There is a protective membrane that you do not want to damage. So eggs you're going to do this with must be easily brushed off and little more. Generally speaking this rules out duck eggs. I wonder sometimes if they're aware they're laying eggs or if they just fall out. I can see it now.

From Pine Straw To Carbon Powder To Neutralize PH
Pine straw in a garden creates PH problems. The acid locks up the nutrients. Carbon however acts as a buffer and becomes the storage battery for those nutrients. This is how I now get just a bit more out of a carbon burn using pine straw.

Homey G's Goldenrod Addiction
Dogs are nothing short of awesome. Ours is no exception. He will ask to get on the bed in the mornings with us and gets a ton of attention. However that is the case from November until about May 1st. Then something happens. He has a serious jones for goldenrod. He will act like he's going to throw up and then the second he gets outside he will head for the nearest goldenrod and chow down.

Of Bruschetta and Biscuits
In this video I explain visually how to make Bruschetta. Along the way you are also making something that can sit in your pantry patiently waiting to be used. That is twice baked bread or biscuits. I will quite often buy a couple of French bread loaves and prepare this. Slice the bread and then toast it in the oven. Then you either make the Bruschetta or you leave it in longer and heat it a little lower so as to dry it. Then store it in Tins or plastic bags. I like to use these on Roasted tomato Basil soup and on onion soup.

Not So Soy Sauce Part 1
This is an alternate to soy sauce. I've made soy sauce many ties and decided to try a locally sourced version. What soy sauce is really is an amino sauce created by mixing a protein source such as beans and a carbohydrate source such as a grain or even potatoes. This mix used 6 pounds of dried nixtamalized corn and six pounds of dried black beans,
Now about the rest of the calculations in the recipe towards the end. If you make your own version of this your numbers will be different and these are the steps you need to go through for a 15% solution in the mix to ensure you that it won't have bacteria trying to ruin your efforts. Things such as fish sauce use a similar mix. Typically the salt content is 15% to 17%, but in some cases out of caution it goes a bit higher. Such is the case quite often with fish sauces.
The amount free unbound water in this particular mix I'm making here is 137.2 ounces. Since we're shooting for a 15% salinity on the water you subtract that number from 100%. This gives you 85. Divide 137.2 by 85 and you get 1.6141 ounces. Multiply that by 15 in order to get the required weight of salt. That number in this case is 24.21. Toss that in on top of the contents of your bucket and then mix enough saline solution at 15% to cover it up. Weigh out 85 ounces of water and add 15 ounces of salt. Sea salt is the best you can use for this just avoid iodized salt. I keep reading that.
After you've done this mix it in the morning and then at night for the first two weeks and then once a day after that. Once it's been going for a month or so stir it every once in a while. Keep this up[ for anywhere from three months to a year. I usually just go for six months.

Make Your Own Lumber
This last summer while I was trying to burn loads of wood for bio-char for the garden they issued a no burn notice for the entire state as a result of Covid (WuFlu). I planted the garden instead and am finishing the carbon burns this year. That gave me time to learn how to make lumber with a chain saw. I also learned how to make bowls spoons etc. Those were mostly made out of a Cherry tree that was making idle threats towards my truck. I'll be doing more of that as time passes though. The items I made of Cherry are named ‘The Covid Collection’. If you were wondering.
