Hot Smoked Salmon
Hot Smoked Salmon... Wet brining and a slow hot smoke is the way for me! Recipe 👇
While I am not the biggest fan of salmon, I do love smoked salmon! There are a few different ways to prepare a smoked salmon, dry brine and cold smoke or wet brine and hot smoke. The latter is my go to for smoking salmon.
I love the the flakey texture from a hot smoke versus the sliced, cold smoked style. We break this into large chunks after cooking for a salmon salad or serve a piece just like this on a bagel for an amazing breakfast sandwich.
Salmon Wet Brine
2 quarts cold water
2/3 cup kosher salt
2 cups brown sugar
1/4 cup bbq spice
1. Combine all ingredients in a bowl and whisk together
2. Pour the brine over the fish and allow it to brine for 3-4 hours
Hot Smoking Salmon
3# salmon filet, skin on
1. Remove the salmon from the brine and place in the refrigerator, uncovered, overnight
2. Season the salmon with bbq spice
3. Heat your smoker to 185 degrees and place the salmon in to cook
4. Smoke the salmon for 3-4 hours until the internal temperature is 140 degrees
5. Allow the salmon to come to room temperature then refrigerate until serving

How to Reverse Sear a Steak
We go through how to reverse sear a steak in this video. In order to reverse sear steak, all you need is an oven, a thermometer and a pan. This cooking technique is amazing for giving you a tender steak with a great char.
If you have never tried to cook steak in the oven or to cook steak on the stove, this easy method combines both of those techniques into a simple, approachable and fool proof way to cook steak. Similar to when you sous vide steak, the reverse sear slowly breaks down the connective tissues in the meat and gently dissolves the fat, leaving you with a perfect cut ready to cook on the stovetop or grill.
This technique isn't just for the oven either. You could do the same reverse sear method using a smoker, giving you a delicate smoke kiss before charring your steak to perfection. We use a tomahawk ribeye steak for this video, but this works great with filets, thick new york strip steak, or any thick cut steak.
Once you try this steak recipe you will never want to cook another tomahawk steak that isn't reverse seared.

How to make perfect salmon every single time
We take you though how to sear salmon, the best way to oven roast salmon, and other tips and tricks to make your own salmon recipe. I use the technique to cook any fish and once you try this once, you will know how to cook fish at home.
The two most important steps in the video are drying your fish and to preheat a pan. But if the salmon char is too dark for your liking, you could leave it a minute less on the stovetop. Below is a timeline snap and links to my favorite fish cooking tools!
When you cook the salmon, you put it meat side down (skin side up) in the pan with a light coating of oil. Allow it to cook for 2-3 minutes and place it in a 425 degree oven. A thick piece should take 7 minutes, thinner ones 4-5 minutes.
Once the salmon is cooked, it should move freely in the pan. You should be able to flip it without a easily and have a nice, even crust on the fish.

* Cauliflower Fried Rice Recipe *
1 head Cauliflower
2 Large Eggs, Beaten
½ cup EVOO
Salt
3 Garlic Cloves, Sliced
1 tbsp Chopped Ginger
4 tbsp Soy Sauce
3 tsp Sesame Oil
½ cup Diced Carrots
½ cup Peas
¼ cup Chopped Cashews
4-5 Green Onions
Directions
1. Heat the pan with the oil and cook the egg.
2. Remove the egg, chop it and set it aside
3. Add the garlic, ginger and the white part of the green onion to the pan and sauté for 3-4 minutes
4. Add the cauliflower and sauté for 5 minutes while stirring
5. Add the soy sauce and sesame oil and stir until mixed through
6. Add the carrots and peas and cook together for 8-10 minutes
7. Add the chopped egg, cashews and green onion tops.
8. Cook for a few more minutes and garnish with more green onion tops.
